Bread lightly toasted with nut butter slathered over it, topped with thinly sliced bananas makes a quick and delicious snack (or breakfast or lunch). Nuts and bananas are a natural combination, so why not combine them on an open faced sandwich? This was a favorite of mine growing up.
This was our lunch yesterday, and it was lovely to not have to worry about making any “real” meal. We had stayed home yesterday from several things that we had been planning on going too, because Joel is still recovering from being sick and wasn’t feeling up to it, and I had gotten tired out on Saturday. We spent a lovely morning laying out on our lawn, enjoying the beautiful spring sunshine. This was the view above our heads…
Elena amused herself with some rocks nearby. I brought out a big blanket, some books, and coloring things for Elena. We are both so glad that we did, because today we feel so much better rested (and Joel is finally feeling better).
I think it’s so important take little rests here and there, especially when you have a busy lifestyle in general. It can be a simple as a reading a good book with a cup of tea for a few minutes, or, like us, staying home and resting on the weekend. Our bodies need rest, and they don’t always get it.
So when you need to have a restful day, here is a simple meal or snack to make.
By the way, I finally tried some soaked and dehydrated nut butter I recently bought. It was delicious! I will have to learn how to make my own, but it’s sure nice to have a ready made, quality product like this!
Nut Butter and Banana Toast
Bread to be toasted (pictured is Ezekial’s sprouted bread, you could also use sourdough bread).
Bananas (about a half of a banana per slice of bread)
1-Toast your bread
2-Slather desired amount of nut butter on toast
3-Thinly slice banana and place on top of the nut butter
