Nut Butter and Banana Toast

Bread lightly toasted with nut butter slathered over it, topped with thinly sliced bananas makes a quick and delicious snack (or breakfast or lunch). Nuts and bananas are a natural combination, so why not combine them on an open faced sandwich?  This was a favorite of mine growing up.

This was our lunch yesterday, and it was lovely to not have to worry about making any “real” meal. We had stayed home yesterday from several things that we had been planning on going too, because Joel is still recovering from being sick and wasn’t feeling up to it, and I had gotten tired out on Saturday. We spent a lovely morning laying out on our lawn, enjoying the beautiful spring sunshine. This was the view above our heads…

Elena amused herself with some rocks nearby. I brought out a big blanket, some books, and coloring things for Elena. We are both so glad that we did, because today we feel so much better rested  (and Joel is finally feeling better).

I think it’s so important take little rests here and there, especially when you have a busy lifestyle in general.  It can be a simple as a reading a good book with a cup of tea for a few minutes, or, like us, staying home and resting on the weekend. Our bodies need rest, and they don’t always get it.

So when you need to have a restful day, here is a simple meal or snack to make.

By the way, I finally tried some soaked and dehydrated nut butter I recently bought. It was delicious!  I will have to learn how to make my own, but it’s sure nice to have a ready made, quality product like this!

Nut Butter and Banana Toast

    Bread to be toasted (pictured is Ezekial’s sprouted bread, you could also use sourdough bread).
    Nut Butter
    Bananas (about a half of a banana per slice of bread)

1-Toast your bread

2-Slather desired amount of nut butter on toast

3-Thinly slice banana and place on top of the nut butter

Enjoy!

    Kim,
    I just read all your sourdough posts and I was wondering if the sourdough starters that you have used are made using store bought yeast? I want to make a new starter with whole wheat but I didn’t know if I could just mix water and flour together and let them ferment enough on their own to become a starter. Thanks for any advice on this.

    I mash avocado & banana together, sprinkle with some lime and black pepper and spread it over bread. Tastes like a treat.

    This has been a favorite of mine for years! I sprinkle a little cinnamon on top, also.

    we were raised on PB and banana sammies with fresh honey from the beehives- my husband always thought it was so weird! I think these were Elvis’ favortie sandwhich! I love to put sunbutter(no nuts due to allergies) and banana on leftover pancakes- another favorite as a child- our dad always made pancakes for sunday Bfast and we ate the leftovers as sanwiches for lunch with a nice tall glass of ice cold milk! I was laughing at this post- glad to see there are other ‘weirdos’ out there!

    I love banana nut butter toast! It is sooo good. I make it for breakfast sometimes. But the bread I use is whole-wheat walnut raisin bread I get from the farmer’s market (I haven’t gotten used to the sour-sweet combo that results from our sourbread). It goes perfectly with peanut butter and banana! I also like to sprinkle cinnamon on top because I’m a big cinnamon fan. I think the best drink for this meal would be some good cold milk (if you don’t drink cow’s milk, homemade nut milk)…yummy. =)

    Another great treat for those of us who can’t have nuts – replace the nut butter with pumpkin seed butter. Smear over toast with bananas – just as delicious! Also really good as a wrap – spread pumpkin seed butter over a rice flour wrap, roll around a very ripe banana, and heat in a frying pan (you can heat in coconut oil, or not) for a few minutes. It gets crispy, melty and sweetly delicious!
