Bread lightly toasted with nut butter slathered over it, topped with thinly sliced bananas makes a quick and delicious snack (or breakfast or lunch). Nuts and bananas are a natural combination, so why not combine them on an open faced sandwich? This was a favorite of mine growing up.
This was our lunch yesterday, and it was lovely to not have to worry about making any “real” meal. We had stayed home yesterday from several things that we had been planning on going too, because Joel is still recovering from being sick and wasn’t feeling up to it, and I had gotten tired out on Saturday.
