Black beans and scrambled eggs are gently flavored with cumin, garlic and onion. Packed into a tortilla, they make a great breakfast burrito (or serve at lunch or dinner!. You could serve these plain, or with a wide variety of toppings. And with these only being about a dollar a serving, you will have a yummy treat for very little.

I made these just for me and Elena yesterday. I can be the Queen of simple cooking, and usually make the plainest of plain lunches for us (or reheat leftovers). But yesterday I decided to put just a bit more effort into our lunch and this was the delicious result. We made two burritos and then ate the rest of the filling on the side. I would probably figure two burritos per person.

Cost Analysis

    1 1/2 cups of organic cooked black beans .35
    3 eggs, .99
    1/4 cup of organic onion .8
    1/4 organic red pepper, .50
    1 garlic clove and cumin, .10
    2 teaspoons to 1 tablespoon ghee .15

Average Total Amount per Filling: $2.17, 4 small servings, $.54 per serving
Cost per homemade tortilla: $.20, cost for sprouted Ezekiel tortilla $.50
Total cost per burrito: With homemade wrap: $.74, with sprouted tortilla $1.04
Our addition: Organic avocado- .25 cents per quarter (this brings it with the homemade tortilla to $.99 per burrito).

Scrambled Egg and Black Bean Burrito Filling Makes enough for 4 medium sized burritos
I am not sharing my sourdough tortilla recipe today, but it’s similar in a lot of ways to this recipe. As I was sharing this with my three year old, I made it quite mild. But you could easily add a bit more spice to this filling by adding just a bit of something like red pepper or cayenne pepper. Even better, you could  serve this with a salsa, sour cream, or hot sauce. Oh, and the black beans discolors the eggs. If that bothers you, cook the eggs separate.

    2 teaspoons ghee, butter, coconut oil, or olive oil
    1/4 cup of chopped onion
    1/4 red pepper, chopped
    1 small clove of garlic
    1/4-1/2 teaspoon cumin
    1 1/2 cups of cooked black beans
    3 eggs, lightly whisked

1-In a small saucepan, heat the ghee until. Add the onion and red pepper and lightly salt. Cook until the onion and red pepper are very soft and sweet. If they start to brown, turn down the heat. You want to mostly soften, not brown. Add the garlic and cumin and cook for another minute.

2-Add the black beans (you can add a bit more ghee or oil if needed), and cook until heated through. Then add the eggs. Scramble the eggs with the rest of the ingredients. I like to use a fork for this task. Salt to taste, and it’s done!

    one of my families favorites breakfasts! I cook potatoes, add the eggs and other goodies, cook then sprinkle a little raw cheese and sliced avocado (or guac) and roll up. we are lucky enough to have a great little restaurant here in Pismo Beach that serves organic local produce that makes these burritos of joy.

    This looks great! I have black beans on the stove as we speak cooking away.
    I can’t wait to hear about your sour dough tortilla’s I have my own recipe we have been using but having never worked with sour dough before or made tortilla’s so I have no comparissons to help me. We(my daughters and I) have been working on perfecting them for about 8 months. Not perfect yet by far but still edible!
    Thanks for a terrific web site. I love traditional, frugal and nourishing cooking. It is so fun and satisfying.

    Have you tried freezing these? Making tortillas is a pain, so if it could be done as a batch cooking thing and frozen it would make life a lot easier. It sounds great!

    I love the ease and simplicity of this recipe. Too many people think eating healthy is ‘hard word’ when, at least in my experience, it really only takes willingness and an open mind. I think I’d add fresh shredded veggies – maybe carrots and zucchini. We do breakfast for dinner about once a week because it’s quick and nutritious – this is right up my alley.

    Ooohh… and I have some more salsa! I hadn’t thought of putting my beans with eggs yet. And my good free-range eggs are cheaper than yours, so this is a really frugal meal for me 😀

    I had some leftover cooked white beans and I used these in the burritos! These were a quick lunch dish. We served ours with grated cheddar cheese, salsa, and sour cream. They were served on warmed flatbreads because that is what we had in the house. Very tasty!
