We’re in the bounty of summer now and the vegetables in the garden are beginning to flourish. Our local farmer’s market is a paradise for foodies {like myself}. Fresh, local, organic veggies and fruits at every stand. If I had a million dollars… I’d buy lots of food. It’s true. Currently, my refrigerator is full of just picked vegetables that are going to be eaten within the next day or two. My favorite: cucumbers. Hands down I could eat four a day. Especially when served with this curried bean dip. I go crazy! Give me a pile of snow peas and sliced cucumbers and let the feast begin.

My little ones like to call this ‘mustard dip’ due to the coloring, although there is no mustard in the recipe. But I’m never one to argue with a child who enjoys eating a plate of cucumbers, particularly in this heat.

Curried Bean Dip

3 cups cooked white (navy) beans
1/2 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon salt
1/4 teaspoon chili powder
1 clove of garlic, peeled and minced
1 tablespoon lemon juice
extra virgin olive oil to taste
cilantro, chopped (optional)

Add beans, spices, garlic and lemon juice in a food processor and puree. Slowly drizzle in olive oil until satisfied with the texture (about 1/4 – 1/3 cup of olive oil).

Garnish with freshly chopped cilantro and enjoy with homemade crackers, fresh garden veggies or something I’m looking forward to making later this summer, eggplant chips. This dip would be great as a spread on sourdough bread too. Serve this as an appetizer before dinner, for an inexpensive, tasty dish that is free from common allergens.

      It’s a blend of various spices, it can be made at home, but I find it easier to just purchase it from our local health food store or Indian grocery store.

      Jamie, oh yes! They are raw crackers made with carrots, beets, celery, and almonds. I’ve been experimenting with using my juice pulp to make crackers with. They are still a work in progress 🙂
