Spicy Salsa

Summer seems to be slipping away quickly, despite any efforts on my part to hold on to it a bit longer. As much as I love the autumn season, all the changing of the leaves, sweaters and scarves, pumpkin patches, corn mazes, there are a few particular things I will miss about summer. Waking up to the sun already rising, the birds chirping in the morning, the crickets singing in the evening, the warmth of the sun and the bounty of local produce. At summer’s end, once winter has come and settled in, I begin to start longing for the fresh ripe in season produce that summer shares.

Although the daylight is longer during the summer, the days seem to still race by, leaving me anĀ allottedĀ amount of time to preserve food. Currently, my freezer is filled to the brim with fruits, hand picked by my family and vegetables from our garden. How lovely it will be to indulge in them throughout the cold and dark days of winter. But of all of summer’s tucked away treasures in my freezer and pantry, what I truly look forward to savouring every year are canned tomatoes.

Curried Bean Dip

We’re in the bounty of summer now and the vegetables in the garden are beginning to flourish. Our local farmer’s market is a paradise for foodies {like myself}. Fresh, local, organic veggies and fruits at every stand. If I had a million dollars… I’d buy lots of food. It’s true. Currently, my refrigerator is full of just picked vegetables that are going to be eaten within the next day or two. My favorite: cucumbers. Hands down I could eat four a day. Especially when served with this curried bean dip. I go crazy! Give me a pile of snow peas and sliced cucumbers and let the feast begin….

Summer Kale Salad

Often times I find myself eating well but spending hours in the kitchen preparing and cleaning. With two little ones running around, time is a precious commodity. Lately I have been striving to balance and organize my life, downsizing and simplifying, which includes time spent prepping meals. With all these new goals, our family still prioritizes eating a diet full of organic wholefoods. And since we’re headed into such a bountiful season, filled with vibrant leafy greens and crunchy vegetables, I thought it to be the perfect time to incorporate more nutrients without compromising time.

Roasted Rhubarb and Nut Granola Parfait

Are you ready for spring? Anticipating those first bites after a long winter? My family sure is. Well I’m excited to have the opportunity to share with you this recipe for healthy roasted rhubarb and nut granola parfait! Great for families who are avoiding dairy, grains, refined sugars or simply just want to live and eat healthier. -Kristin


Gazing out my large front window, cup of tea in hand, watching the sun slowly rise, I can see the beginnings of spring. The grass is a bright green, the buds on the trees have been growing in the last two weeks, and the birds are singing their morning songs. Before long, the first crops of the season will poke through the ground and eagerly folks will flock the market trying to get their hands on one of the first signs of spring. After the asparagus rush and excitement has dwindled, the next local produce that I love forward to is rhubarb.

This tart and yet sweet crop (rhubarb is technically a vegetable), is high in B vitamins including folate, niacin and vitamin B-6. Rhubarb is also a good source of vitamin K and the more red the stalks the higher in beta carotene, and sweetness too. Paired with a touch of honey, some crunchy nuts and a dollop of fresh cream, rhubarb can truly be enjoyed anytime of day.
