Icy cold chocolate banana pie. How good can it get? When I saw a version of this idea in the Clean Eating Magazine I was flipping through at the grocery store, I knew I had to give it a whirl. With a few changes, it was a dessert that we really enjoyed. The filling it only sweetened with bananas too, which I think is great.

We think that it would be perfect for the heat of summer, both because it’s so refreshing, and because you don’t have to turn on your oven to make it. It’s not as creamy as I was expecting, so don’t expect it to be like an ice cream pie. If you are looking for that (which would be delicious), why not take the crust from below and layer it with roasted banana ice cream and coconut chocolate ice cream? This desert is more light and icy. It was also the perfect project for my 4 year old to help with.

Banana Chocolate Freezer Pie

Adapted from a Clean Eating Magazine Recipe

I made this in an 8 inch springform pan for easy cutting and removal. The original recipe used a normal whole wheat crust in a pie pan. I am pretty sure you could also use my crust in a pie pan. I also think that cream in place of the coconut milk would be great, or even just whole milk.

Crust
1 cup of almonds, (soaked and dehydrated, optional)
2 tablespoons honey
2 tablespoons butter or coconut oil

Pie Filling:
5 bananas
1 cup of full fat coconut milk
½ cup of cocoa powder
1 teaspoons vanilla

1)    Toast the almonds in a small saucepan over medium-high heat until browned and fragrant. Place in a food processor with the butter and honey. Blend until finely ground. Push evenly into the bottom of a greased 8 inch springform pan, or pie pan.

2)    Rinse out the food processor and add the pie filling ingredients to it. Blend until quite smooth, scraping down the sides as needed. Pour over pie crust and freeze until well set (at least 4 hours).

3)    Use a very sharp knife to cut into pieces. Can let sit for about 20 minutes to soften it up a bit. For presentation and added flavor, top with sliced bananas, sliced almonds, or chocolate shavings.

Hi Kimi- I’m going to make this today with your peanut butter cookie (minus some of the sugar) as the crust. My almonds are running low, and I think the peanut butter will be divine with the banana and chocolate! 🙂 Yum!

Jamie, It’s pretty sweet with just the bananas, as long as you use ripe ones (but by all means further sweeten if you like!). Because the mixture is frozen, it doesn’t need to be thickened, however the gelatin might improve the texture (preventing some of the ice crystals to form). Let me know if you try it!

Made 3 pies for my daughter’s first birthday & they were incredible. I soaked and dried the nuts (used a combo of almonds, pecans, and walnuts). Didn’t toast/brown the nuts. Also, put strawberries on top. One of my pies was like pudding since I had to stack 2 of them. Another was like ice cream. Equally enjoyed. Thanks for a great recipe!

I made the filling as popsicles and they were great. Used Nancy’s cream cheese instead of the coconut milk since I had some that needed to be used, but next time will do coconut. Everyone loved them! Will have to make it as a pie sometime too. Thanks… we love your recipes!

Do you think I could add a few egg yokes to the filling to make it creamier and give another boost of nutrition? I’m always trying to squeeze some extra protein and good fat into my husbands diet. Maybe some peanut butter too? Hm… I like the idea that someone had to make it into popsicles. I’ll probably use cream or raw whole milk cause I can never find good coconut milk and my husband doesn’t care for coconut flavor anyway.

      Lori,

I bet that a few egg yolks would definitely be a good addition. And peanut butter would be yummy, I think too. Let me know if you try it. (I am sure this is just as good with cream as it is with coconut milk. :- ) )

    Okay Gals,
I found this reicpe to have too much cocoa, it was bitter tasting for my liking. Personal preference. I did add some stevia – comment from another post. This did cut the bitter chocolate taste a bit. Sorry, not one of my favorites.

      Kristina,

Welcome! The only concern I have with the low-fat, is that it would become too “icy”. This dessert is definitely already on the icy side, and if you took out more fat, it could definitely become even more icy.
