Creamy Cranberry Salad (With a Dairy Free Version)

Growing up, along with Grandpa’s Green Beans, I loved my mom’s (or was it my Grandma’s?) sweet and creamy cranberry salad served every Thanksgiving. My cousin and I would scoop out large cupfuls of the leftovers for a snack the next day-so good.  In this cranberry salad, fresh cranberries are mixed with apples, pineapple and chopped nuts, and then sweetened and dolled up with whipped cream. In this version I used coconut cream for a dairy free version, but I also give an option for whipped cream too.

There are two types of cranberry salads. One is tarter and simple, usually used as a condiment to go with the turkey. Another is more like a dessert. This one is definitely more like a dessert-which is why I loved it even as a child. But grown ups like it too!

Pumpkin Latté (Caffeine, Dairy, and Sugar Free)

A warm drink is in order this time of year. And what’s more fitting than a pumpkin latté? About every coffee shop has one, including Starbucks. My version is probably not as sweet compared to coffee shops, but we’ve been sipping them down rapidly! Too often, we feel that we can’t have certain treats because they are unhealthy, when really we can easily make our own healthy version of it!

For mine, I used Teeccino a caffeine free coffee substitute, real pumpkin (read here how to roast your own for pies and lattés!) , spices, vanilla and sweetened it with honey or stevia. For my dairy free daughter, I use coconut milk, and sometimes for Joel and I, I’ve used raw whole milk-heated just until warm.

In the picture above, you see it served with Spiced Macaroons. A lovely combination!

Deep Dark Chocolate Tart (Gluten, Grain, Dairy, Refined Sugar free)

I hate it when I make this tart. Really….I do. Because every time, I want to have just a “little more” of the delicious, bittersweet tart, and then……..just a little more (and the struggle goes on). It’s hard to resist with it’s chocolatle nut based crust, and it’s creamy, dark chocolate, decadent layer of pure chocolate goodness.

Very hard to resist.

Really, I can’t even believe that I am sharing this recipe at all. There are a few recipes a cook should always keep to themselves as “chef’s secrets”. Signature dishes that only they know how to make. Yet, here I am sharing it with the world (well, whoever of the world wants to read my blog, that is). Know, dear readers, that you are loved, as I give you one of my most loved recipes.

Cooking to Heal Review: Coconut Orange “White Fudge”

These little “white fudge” pieces are full of orange and coconut flavor and sweetened with a mild honey. My two year old daughter loves them! Because they aren’t overly sweet, I feel that they are a great treat to give her.

The other great thing about them is that they are a wonderful treat for kids (or adults!) on special diets. And that’s what the Cooking to Heal DVD set it all about it.
