Only a few days left until Easter Sunday, and it’s raining. I am always sad when it rains on this weekend because Easter should be light and cheery and full of life.
But at least we can still make some yummy food! I put together some of my favorite foods for this time of year and would love to have you share what you will be serving this weekend too.
Turkey or Chicken Apple Sage Sausage Patties These are easy to throw together and super delicious. Great for an Easter brunch or breakfast
To go with them, my Fluffy Soaked Biscuits is one of my most popular recipes. Add some Baked Eggs and some Fried Apples on the side and you have yourself a great breakfast!
Though fluffy, soaked, pancakes are always nice too. And for a really “Springy” baked good you can always make Dandelion Speckled Muffins.
Seven Hour Leg of Lamb is a tender, flavorful, super easy recipe that you don’t have to worry about messing up. One of our favorites.
For a nourishing and frugal appetizer, Liver Pate served on Rosemary Crackers is delicious!
Everyday Italian Rice Salad is a simple (and frugal) side dish that’s light and delicious. It would be special to add some Springy vegetables to the mix like asparagus.
Nourishing Nettle Soup is very flavorful and completely in the realm of a Spring special. It would make a very nourishing first course.
Spring-is-Here Asparagus Egg Drop Soup Bright red peppers, soft spinach, and delicious, in season asparagus float in a rich chicken broth, doted with “egg drops”. This soup was inspired by some beautiful local asparagus I found at the produce market. I feel this soup speaks “Spring” with every bite. So simple, yet so satisfying!
Creamy Asparagus Soup with Gremolata This light asparagus soup is full of earthy asparagus flavor, brightened with the gremolata, a mixture of lemon peel, fresh garlic and parsley, which gives it just the right balance of earthy asparagus and bright herbs.
A few simple but great vegetable side dishes include, Simple Pan Fried Zucchini and Onions, Buttery Lemon Broccoli, and Garlicky Basil Green Beans
For a special treat, try Garlicky Fiddlehead Ferns, so delicious! I love these and wish I could make them year round.
Sauteed Spinach with Lemon, Pinenuts and Onions is a very flavorful and yummy vegetable side.
I already shared one salad idea with you, my Bacon, Egg, and Avocado Salad earlier this week. (Speaking of eggs, Lemon Bacon Deviled Eggs are pretty darn good too.)
Roasted Asparagus is my absolutely favorite way to prepare asparagus. And it’s so simple and easy too!
On the sweeter side, my family always loved to make Fruit Juice Gelatin for a kid friendly sweet side.
Speaking of sweets, I adore Lemon Sponge Custard , and Tangy Lemon Curd is certainly good too! (You can also make it into grain free Lemon Curd Bars).
And I know that Coconut Orange “Fudge” has been used as a special candy treat by several families at Easter time (especially those needing a GAPS friendly treat).
Well those are a few of my ideas for the weekend. Please share what you are doing! I would love to hear!

I’m actually always glad when the weather is bad on Good Friday. It seems appropriate to mourning. Usually, the sun comes out for Easter Sunday.

Oh, I think I will add those fried apples to our Pascha breakfast. We are having Pascha Bread, Pascha Cheese, Bacon, Hard Boiled Eggs and, now, Fried Apples.

I just got done baking bunny buns. Just shaped my bread into bunny shapes complete with a “fluffy” tail. Very fun for the kids (and adults too!)

I can’t wait to try the biscuits! They look amazing.

I adore your blog. I am interested in a lot of recipes from this post, especially the ones with wildcrafted ingredients. I am going to try to experiment with nettles, dandelion greens, and fiddleheads this spring.
