Today I wanted to highlight two posts from last week (which, as always had a plethora of great posts). Wardeh’s “Potato Bowls” is a great frugal dinner and a wonderful way to use leftovers too. Love it. Then, Shelly had a great post about making your own homemade flavored vinegars-a great gift idea. It’s not too early to think about Christmas! Thanks Ladies!

This week I’m sharing one of my family’s favorite simple casseroles: Mexican Pizza. It’s a simple, tasty dish. The pasta sauce and picante mix is surprisingly delicious! My entire family loves this one. I use my homemade pizza/pasta sauce in place of the spaghetti sauce and also use whole grain tortillas rather than regular flour tortillas. This is fantastic served with a big green salad.

Oh, yumm… These sourdough tortillas were awesome! Chewy, soft, and pliable! The second day, I heated them up in a warm skillet, one by one, where they retained all their first day softness.

Katie @ Kitchen Stewardship told me about this carnival last week – so this is my first time participating. Today I’m sharing my husband’s favorite soup – which says a lot for a man who hates carrots! It’s a great way to use up extra carrots, takes little time, and freezes so well. I often make a double batch and freeze the extra in pint jars and then pack it in my husband’s lunch.
