Today I wanted to highlight two posts from last week (which, as always had a plethora of great posts). Wardeh’s “Potato Bowls” is a great frugal dinner and a wonderful way to use leftovers too. Love it. Then, Shelly had a great post about making your own homemade flavored vinegars-a great gift idea. It’s not too early to think about Christmas! Thanks Ladies!
This week, if everyone could please make sure that you format your comments like the following that would be great. If you make sure to leave your name and the name of your blog in the actual comment it makes it so much easier for me. Thanks! And don’t forgot to link back to the carnival!
Kimi @ The Nourishing Gourmet Five Healthy and Frugal Meals (https://www.thenourishinggourmet.com/2009/07/five-frugal-and-healthy-meals.html) Today I share five meals that are healthy, easy and frugal. They also happen to be family standby’s so you know they’ve been “family approved”. Check them out!
Pennywise Platter Thursday 10/21
Kimi @ The Nourishing Gourmet Garlic and Rosemary Roasted Root Vegetables
Roasted root vegetables are flavored with garlic and rosemary-a classic combo. This frugal side dish is a fun Autumn side dish.
Kara @ Home with Purpose
This week I’m sharing one of my family’s favorite simple casseroles: Mexican Pizza. It’s a simple, tasty dish. The pasta sauce and picante mix is surprisingly delicious! My entire family loves this one. I use my homemade pizza/pasta sauce in place of the spaghetti sauce and also use whole grain tortillas rather than regular flour tortillas. This is fantastic served with a big green salad.
Katie @ Kitchen Stewardship
I’ve been fiddling with the perfect 100% whole grain homemade tortillas for months, and I’ve finally got it: easy to roll out, totally yummy, very frugal at under 75 cents for 8 burrito-sized torts, AND with an easy “soaking grains” option.
Shannon @ Nourishing Days
Roasted Brussels Sprouts with Pears & Thyme If you are leery of Brussels Sprouts, like most people, this is a seasonal and frugal side dish for crisp fall meals. They are delicious roasted until crisp and contrasted with sweet, caramelized pears and fragrant thyme.
Sarah’s Musings
A look into my homemade pantry where I share three cracker recipes, three bread recipes perfect for soup and sandwich dinners and a few extras, from babyfood to salsa to yogurt.
Wardeh @ GNOWFGLINS – Whole Wheat Sourdough Tortillas
Oh, yumm… These sourdough tortillas were awesome! Chewy, soft, and pliable! The second day, I heated them up in a warm skillet, one by one, where they retained all their first day softness.
Amy @ Simply Sugar & Gluten-Free – Sweet Curried Carrot Soup
Katie @ Kitchen Stewardship told me about this carnival last week – so this is my first time participating. Today I’m sharing my husband’s favorite soup – which says a lot for a man who hates carrots! It’s a great way to use up extra carrots, takes little time, and freezes so well. I often make a double batch and freeze the extra in pint jars and then pack it in my husband’s lunch.
Sheri @ Moms for Safe Food
This week I have a great, guest post about inexpensive, homemade remedies for the flu.
Jen @ A Heavenly Perspective – Vegetable Pasta Sauce
A vegetable pasta sauce recipe
ElizabethG @ Modern Gal — fried rice, Indonesian-style
A special rice hubby-pleaser (he likes it spicy…).

This week I canned grapefruit, I know its cook but it is still better than resorting to processed snacks. I also canned pineapple if you check my archives.
Cook 4 Seasons
It doesn’t get much easier or economical than roasting your own pumpkin seeds. And they are sooooo good for us ,too!
Carrie @ Deliciously Organic
This week I made twice baked spinach potatoes. A few potatoes, cheese, spinach, butter and milk and you’ve got yourself one delicious meal that won’t break the bank.
Ren @ Edible Aria
A frugal favorite for 130 years.. Traditional Maryland Fried Chicken with Cream Gravy
Marillyn @ Just Making Noise ‘Soaked & Ready’ Oats
A frugal and easy make-ahead of soaking and drying oats to have on standby for cookie urges!!
A Modern Gal
My new favorite vegetable dish: Roasted Brussel Sprouts

PS – Kimi – got any make-from-scratch recipes you want to link up to the Un-Processed Foods carnival at KS this week? We love your pancakes; that would be a good one (just use the old post, easy peasy). 🙂 Thanks! Katie

It’s a great way to turn sweet potatoes, one of the best buys in the veg department, into a sustantial meal.
