My apologies for being so quiet this week. It’s been both a busy time with a few days of needing more rest for me (to fight off an infection). Should be back to normal soon!

It’s time to share your frugal and nourishing tips and recipes! Where do you shop for quality food at a lower price? What recipe saves a penny? How do you balance a budget with nourishing food? Share here.

Please read through the three simple rules for those participating. This helps keep the quality of our carnival. Please read them through before linking and thanks again for your continued participation.


1) No linking to giveaways or promotions for affiliates or sponsors. One thing that I’ve noticed increasingly on Pennywise Platter is that I am getting more and more promotional pieces for affiliates or sponsors and a lot of giveaways. I’ve decided to keep Pennywise less “commercial” and more in tune with the spirit of the carnival by not allowing these links anymore. There was nothing wrong with those of you who linked to them, I just think that it will protect the integrity of our carnival better without them. Plus, it makes our links valuable in the future as well. A link to a giveaway three months old isn’t going to be worth browsing in three months time, but a link to a recipe for a frugal soup would be. I will be deleting any giveaway links or promotional links.

2) Keep the ingredients “nourishing”, such as whole grains, meats, vegetables, legumes, unrefined salt and sugars, chicken, etc. I am not going to be an ingredient police every week, but if there is a link to a post that is obviously not filling any of the criteria for healthy (for example, a white flour, white sugar birthday cake), I will delete that link. However, feel free to post vegetarian, vegan, raw, low-carb, etc.

3) Link back to the carnival This is common carnival courtesy. And more then that, it helps build the community of the carnival as you are sending your readers to others participating. And please, as a blogger, check out other’s posts and leave a comment! I know that we would all love to hear from each other.

    Hi, I’m sharing a post about picking wild asparagus. Asparagus is my first foraging love, as I learned to pick it as a kid. Today, I eat lots of wild foods, but asparagus remains special to me. I picked me first new spears this week, so it really feels like spring now 🙂

    Creamy Cauliflower Carrot Custard– very easy and probably a great way to get more vegetables into your diet! It’s basically a silken crustless quiche.

    This is sized for one or two, but could be upscaled for more.

    I don’t have a post to share today, but I do have a few tips. I go through a lot of fruits and veggies. Especially when I do my green smoothies. I always buy organic, so as you can imagine it can be pricey.

    I recently bought a little standing freezer to put in the garage. I now watch for produce on great sales and then I freeze them. For instance, I often see red-band bananas (too ripe to sell at regular price) on sale. I just bought 10 lbs of organic red-band bananas for $.25/lb. I peel them and lay them on a baking sheet and freeze them. Once frozen, I put them in a gallon freezer bag. They are great to throw in my smoothies, or to thaw out and use for banana bread or other baked goods.

    I just did the same thing with organic strawberries. They were $1.99/lb. I washed them, let them air dry for a few hours, cut the tops off, lay them on the baking sheet and freeze them. Then I put them in gallon freezer bags. I also use these for my smoothies and baked goods, or even fruit compotes and sauces.

    Same thing with Kale, which I use in my smoothies. I bought a bunch on sale, blended it up in my VitaMix and poured it into ice-cube trays. I throw a few in my smoothie, and voila…green smoothies.

    This is a great way to stock up on in-season produce and have it all winter long without paying the exorbitant prices! When I get to harvest my garden this year I will be freezing a lot of things as well.

    Well I should have just done a post. This comment was long enough to have done so! Sorry, but I hope it helps someone. 🙂

    Hi Kimi —

    My contribution today is Peanut Butter Cookies with Cashews…sweet, tender, rich and a little crunchy. In spite of the sweet, they still have a lot of nutrition, like in the whole grain and high protein flours, the nuts and eggs.

    Hi Kimi, sorry if there is a way to do this already, but are all your Pennywise Platters stored in an easy to find way on the site? I am trying to find a recipe from a Pennywise Platter entry from last year and it’s really tedious to enter ‘pennywise’ as a search term then click back. Is that the only way to do it?

    I’m sharing an old post about Homemade Tostadas from Scratch. I have the recipes for the tostadas and the refritos (beans) to go on top. These are super yummy and much cheaper than buying packaged tostadas and beans in a can! I haven’t been blogging in a while, but I may start up again 🙂

    There are some really not nourishing foods on some of these links. I’m always happy to follow the links and try the recipes on PennyWise…but things like marshmallow fluff (it’s not healthy just because you didn’t add the sugar to the recipe)
    and margarine and brown sugar on sweet potatoes are not nourishing healthy foods.
    I can find recipes all over the internet for food like that. I look here for whole foods.

    I just linked a recipe for Roasted Radishes (mixed with a few other root veggies, as well) that my son and I enjoyed with our Friday lunch as an accompaniment to a grilled petite sirloin. They were delicious…and easy too!
