This cookbook was inspired by the idea that food does not have to be complicated to taste good. Furthermore, good food is real food, such as dark greens, bright pineapple, or savory grassfed steak. The recipes in this book were created with everyday needs in mind. Practical, tasty, and simple enough to enjoy on a regular basis, but also full of nourishing, healthy ingredients.
Recipes include old time favorites such as Caesar Salad, a remake of your mother’s Jello salad (this time made with real food ingredients), and Taco Salad. These versions include fresh ingredients for a more nourishing and fresh flavored dish. For example, Mexican beef is made without a seasoning packet, fruit gelatin is made without reaching for a box of refined sugars and dyes, and salad dressings are made using pure ingredients, with none of the additives and flavor enhancers found in store-bought. In addition to old classics, there is a wide variety of fruit, grain, legume, potato and green salads.

Introduction: This section includes information about ingredients as well as practical tips on plating, washing and storing lettuce and more.
Classic Salads: Well known and loved salads, such as Nourishing Caesar Salad, Fresh Taco Salad, and Wilted Spinach Salad with Hot Bacon Dressing among others.
Mains and Sides: 12 more green salads, from hearty Main dishes (like Mexican Squash and Black Bean Salad) to lighter sides such as the Endive and Pear Salad.
Grain, Potato and Legume Salads: This section features quinoa and rice salads, legume salads, pasta salads, and potato and bread salads. A few highlights includes the Summertime Quinoa Salad (quinoa spiked with red peppers, corn, and zucchini with a lemon pepper dressing), Tuscan Clam and Bread Salad, Everyday Rice Salad and Lemony Chickpea Salad.
Vegetable Side Salads: Simple Carrot Salad, Cucumber and Red Onion Salad (perfect side for a barbecue), Fennel and Bacon Salad, and more!
Lettuce Wraps: Finger food salads including Soy and Sesame Chicken Lettuce Wraps, Moroccan Beef or Lamb Wraps, Vietnamese Lettuce Wraps with Two Dips, and Apple Cranberry Turkey Salad, among others.
Fruit Salads: Salads that can be served at a brunch, as a dessert, or as a side, like Melon and Strawberry Salad with a Basil Honey Syrup or Creamy Topical Fruit Salad, or Retro Berry Gelatin.
Beef, Chicken & Other Good Things: In this section you find instructions for pan roasting steak, roasting and sauteing chicken, making homemade croutons, cooking homemade beans and more.
Salad Dressings: Ten salad dressing recipes that are mixed and matched with all of the salads throughout the book. Favorites include Simple Balsamic Vinaigrette, Roasted Garlic Dressing, and Strawberry Vinaigrette.
