Leon Salad from Fresh: Nourishing Salads for All Seasons

Several of you asked for sample pages of my new cookbook, Fresh: Nourishing Salads for All Seasons. As I thought about what recipe to share with you, I landed on Leon Salad. As I shared in my book, I was introduced to this salad by a family member. I loved the flavor combination with bits of basil, olives, salami, grape tomatoes and chickpeas. So when I was writing my cookbook, I thought of that salad and created my own version and it’s been one of my favorite salads ever since. In fact, my husband will sometimes complain that some of his favorite salads from my cookbook aren’t being served enough because I serve Leon Salad so often! Also included in the sample are two recipes for salad dressings. My updated version of our Everyday Salad Dressing and another favorite: Simple Balsamic Vinaigrette.

You may notice in the Leon Salad recipe that I suggest one of two salad dressing recipes. Many, if not most of my salad recipes include various alternative dressings. This allows you the freedom to pick a salad dressing recipe that you especially like (but still know that it will work well with the salad), or to use what you already have made up.

    I made this for 2 family gatherings this weekend. Went home with an empty bowl each time! This is a great salad and the Everyday Dressing is so good. I am purchasing your book today as I always am looking for good easy dish dishes/salads.
