Tomorrow is Pennywise Platter Thursday! Today I am going to be sharing five frugal meal ideas.

Cold Pasta Salad (pictured above)

With the sun shining, it’s nice to have some do ahead dishes that can be served cold. Cook up some pasta, saute some veggies and make a simple dressing like my everyday dressing, and your work is done! Coat the cooked pasta and veggies with the dressing and chill. All you need to do is toss a little extra dressing over the pasta before serving and you are set to go. For the above dinner, I used homemade soaked noodles made out of kamut flour and added some white beans as well. It was delicious

Super easy and super yummy, another family standby that is a budget cutter as well.

    The sprouted lentil sounds wonderful. So does the lentil soup. And the rice salad. Yum! All recipes that I look forward to trying.

    I just made the pasta salad with your everyday dressing. It turned out delicious, both my husband and I loved it. I used vegetables – pole beans, pepper and carrots – from our garden too! I used Trader Joe’s brown rice pasta as I’m not up to trying the soaked pasta recipe at this point. It was good but tends to become firm again when cold. I though I overcooked it a little to compensate but apparently not enough. Does anyone have any suggestions for this or suggestions of other nutritious pastas available for purchase that might work well here? Thanks!
