pennywiseplatter3It’s time! What nourishing tips, ideas, and recipes do you have to share with us today? How do you balance healthy food with being frugal at the same time?

Last week, I really enjoyed Peggy’s idea. It’s so simple, but believe me, it’s really good. I know because we’ve done something like it for a long time.  It’s also great for hot weather. I won’t give it away, but check it out! Thanks Peggy!

This week I share five simple and very frugal meal ideas. What about you? Do you have five stand by dinners that are both frugal and nourishing?  I love something that is easy to throw together, cheap and nourishing too. I hope my ideas are helpful and would love to gather some more from you!

Today I share five meals that are healthy, easy and frugal. They also happen to be family standby’s so you know they’ve been “family approved”. Check them out!

Carrie @ Organic and Thrifty. Today I’m sharing a delicous, low-carb, nutrient dense variation on the family favorite: spaghetti with meat sauce. The spaghetti is replaced by homemade, angel-hair zucchini “noodles”. The whole dish, including grass-fed beef is under $5! Please check it out.

Nurturing Wisdom: Stuffed Portobello Mushrooms is a dish full of contrasts. It’s beefy, yet meatless; crunchy, yet velvety smooth; and sweet, yet savory.

This delicious dish is quick and economical as well as versatile. It can be served as the main dish with a side of vegetables or a grain, or on a whole grain bun, or cut up and placed in a salad.

I’ve been racking my brain trying to find things to share in your Pennywise Platter Thursdays! Until this morning, I couldn’t figure out what to share, so I thought I’d have to pass participating this week. But then, I thought of my fine cheese grater from Norpro, which helps me stretch expensive, good quality cheese for twice as many meals.

Sometimes described as metallic or overly strong tasting, mushy or tough or simply uninteresting, beef liver has gotten a bad rap over the years. It doesn’t have to be that way.. pastured beef liver fried with bacon, just-dug onions, brown mushrooms and fresh sage leaves brings this inexpensive, nutritional powerhouse back to the dinner table. Even the kids will dig it!

    Hi!

    Today I’m sharing a delicous, low-carb, nutrient dense variation on the family favorite: spaghetti with meat sauce. They spaghetti is replaced by homemade, angel-hair zucchini “noodles”. The whole dish, including grass-fed beef is under $5!

    Leftovers Quesadillas! I’ve been trying to use up some leftover chicken and broccoli this week and nothing has come to mind until tonight. Slice up the chicken and some cheese of choice, chop the broccoli (or other cooked vegetable of choice) and cook it in a nice big frying pan size tortilla. Serve with salsa and sour cream, of course!

    Juiced up bone broth, filled with nutrients…

    A couple of years ago my mother put together two nutrient-packed foods into one exceptional package. She mixed bone broth from a leftover leg of lamb with vegetable juice from vegetables that were wilting too much for other uses…….
