This delicious dish is quick and economical as well as versatile. It can be served as the main dish with a side of vegetables or a grain, or on a whole grain bun, or cut up and placed in a salad.

Until this morning, I couldn’t figure out what to share, so I thought I’d have to pass participating this week. But then, I thought of my fine cheese grater from Norpro, which helps me stretch expensive, good quality cheese for twice as many meals.

Leftovers Quesadillas! I’ve been trying to use up some leftover chicken and broccoli this week and nothing has come to mind until tonight. Slice up the chicken and some cheese of choice, chop the broccoli (or other cooked vegetable of choice) and cook it in a nice big frying pan size tortilla. Serve with salsa and sour cream, of course!
