These cookies are absolutely delicious and completely addictive. They make a great substitution for Girl Scout Thin Mint cookies. In fact, if itβs not food blasphemy to say, these are even better. The unrefined sugar and high-quality cocoa powder in the cookies add a certain depth that I love. Oh, and these would be wonderful for Valentine Day, which is coming up. Double the recipe and give them out as gifts!

Oh. My. My husband will be shouting hallelujah if I make these. We’re gluten free, organic, and we also won’t support Girl Scouts, so the Girl Scout version has been outlawed in our home for some years, but these are one of my dear husband’s all-time favorite cookies (and I won’t tell you how many he could eat at a time when his mom would buy them for him!) I’m off to look for some organic mint extract tomorrow, and I am SO going to make these! I bet that these will be yet another of your wonderful recipes that becomes legend in our house. I appreciate all the work and experimentation you put into your nourishing recipes more than you know. I’m a great cook, but with soon-to-be four babies in four years, I just don’t have all the time I would like to create and experiment. It’s great to use recipes when the guess-work has been removed for me. Thank you!

Oh, what a perfect idea for a Valentine’s Day treat! I am for sure going to be making these! I am now craving them. Wish I had peppermint extract on hand. Dang.
I’ve been making a version of these for a few years. I made them for Christmas and both sides of the family RAVED. I made mine much smaller (because I didn’t have a round cookie cutter and ended up using the top of a glass bottle!) so they were bite size. Which was both wonderful and dangerous, all at the same time.
Now…to perfect the Peanut Butter Pattie/Tagalong.

Oh, I used to love thin mint cookies! But then my favorite flavors are mint and chocolate. These just sound so good I’m going to have to figure out a way to make ones I can eat. Hmm…

I made these last night and they turned out FANTASTIC! Thanks Kimi. π I powdered coconut sugar, then ended up adding about 1 1/2 tsp honey (they weren’t quite sweet enough for me). I used freshly milled soft white wheat flour and 1/8 tsp more peppermint extract. Parts of my dough were too sticky to roll, so I think next time I’ll divide it into two. I’m guessing the middle just wasn’t cold enough. With the scraps and super sticky parts, I rolled into balls and flattened them. In the end, I could hardly tell the difference between those I rolled/cut and those I shaped by hand. They really are so delicious!
