I don’t know about you, but breakfast can be the hardest meal for me to plan. The first disadvantage is that it’s in the morning. How are you supposed to fix something nice (and nourishing!) when everyone is running around getting ready for the day? Secondly, the meal can’t be late, like dinner, since there is a definite deadline to when Joel needs to leave (or when I have a student coming). Thirdly, it has to be put together quickly.

These are all obstacles, but there are some delicious options that easily overcome them, and I am sure you know some of them. Let’s share!

On April the 16th, I will be hosting a carnival for everyone to share their favorite nourishing breakfast foods! Share recipes, tips, links, and stories. If breakfast really is the most important meal of the day, let’s do it right by starting the day out healthy.

To Keep Things Centered on “Real Food” avoid the following in the recipes you share:

Any type of Boxed Cereal (unless you find a sprouted one)
White or Brown Sugar
Corn Syrup
White Flour

Include Plenty of:

Fruit
Soaked Grains
Nuts
Eggs
Meats
Milk
And other real food items!

I can’t wait to see what you all have to share. Please feel free to spread the word about the carnival and you are all welcome to use the carnival image as well.  See you on the 16th!

Update: As requested here is a little more information about how the carnival works. On the day of the carnival (in this case, the 16th) everyone gets to share their tips and recipes for the theme (breakfast foods in this case). If you are a blogger, you can post your ideas/recipes on your blog, linking to the carnival post and leaving a comment or sending me an email telling me you have something to share. I will then update my carnival page to include a link to your post. If you aren’t a blogger, then you can leave your recipes and tips in the comment section of that post. Check out my last carnival to see what it looks like. Hope that clears up the confusion and I will see you then!

    I stirr two organic-yolks in a glass of raw milk, some raw honey and nutmeg and drink the whole thing raw.
    The egg-whites I fry with spices in coconut-oil and eat it that way.
    Quick, delicious and veery nourishing.

    I make a big batch of soaked oat groats on Sunday evening and we eat on them all week (we just warm them up each morning with various toppings like: crystalized ginger, nuts, cinnamon, raisins, cranberries, berries, maple syrup, coconut milk, etc). Quick, easy and super healthy!

    I’ve been wanting to do a post on my blog about this, I’ll try to remember to post one that day.

    I cook steel cut oats in a smaller size crockpot (I think it’s a 2 quart?). I use 1.5 cups of oats and 6 cups of water. These oats are so yummy. They are not officially soaked though. Maybe Kimmie has a suggestion on how to make this even healthier. Could you add whey or kefir while the oats are cooking or would that destroy something important?

    KH: Mmmm….sounds good! It would be super easy to “soak”. I prefer lemon juice as it isn’t as sour (and it’s dairy free for me and Elena), but kefir or whey works too!. Just add a bit in and let it soak during the day before you cook it at night. I see that Chiot’s Run will be sharing her own soaked oat groat recipe. Great!

    By the way, I meant to say that I cook my steel cut oats overnight on low. I often use this recipe when we have a late night and I know I’ll be too tired to think about breakfast in the morning. It’s so nice to wake up and have it all ready! Thanks Kimmie for the tip on how to make it even better!

    Yay! This should be fun – breakfast is such a big deal around here… everyone (including my father, who often stops by to eat with us before he leaves for work) complains if we have the same thing every day, so I always have to come up with good ideas! Thanks for doing the carnival – I’m looking forward to new ideas!

    Really enjoying your site. I am teaching a class using NT and I shared the link to your site w my students. Our new fave breakfast is our adapation of an Indian recipe called curd rice or rice curd?! I cook a big batch of brown rice for dinner one night (which I previously soaked w a little whey and water and cook in the rice cooker w cardamamon pods, cinnamon stick, clove and bay leaves) and then in the morning we put a little coconut oil in a pan, throw in some mustard seeds, 2 dry whole chili peppers, a couple of curry leaves and grated ginger then we add in the proportion 1-1 yogurt and rice and toss till warmed. We serve w crunchy peanuts and chopped cilantro. Delicious! My 2dd are 4 and 9. Enjoy!

    I find that, although it is more work, it’s easy to have a grand breakfast, if you do a little bit of preparation work the night before. I love the classic: Eggs, toast, potatoes, bacon, and a glass of Orange Juice. But, it takes so long to get potatoes just right. So, I lightly boil some the night before, and brown them in the morning, and scramble a few eggs. I know bacon isn’t too healthy, but toast with some jam goes perfectly. For added fruit, cut up canteloupe, and the orange juice.

    This is the breakfast I love to make the most. Everyone is happy, and I feel accomplished that day. Especially if I stay on top of the dishes afterwards.

    Hello everyone. I’ve been spending some time on this site for about a month now. I really love Kimi’s variations/expansion on Sally Fallon’s recipes. In regards to the breakfast challenge, I would really love to see what others have come with for those of us who aren’t vegan or vegetarian but cannot eat eggs or much dairy.
    Looking forward to everyones input on the 16th!

    Hi! Can you tell me more about how the carnival works. I have observed several carnivals on your site and read the instructions you’ve put in the posts, but it still doesn’t make sense to me. I have a breakfast recipe I’d like to share, but I don’t know how. I have a blog (http://femveg.org/blog) so do I post it there and then somehow link to you?

    Can’t wait to see everyone’s input! I’m a breakfast girl, but for reasons listed here, sometimes I feel at a loss as to what I should prepare; Especially challenging if I don’t presoak oats or grains. I guess my ‘go to’ breakfast would be to do a quick soup using kombu, dried anchovies (both pantry items) or shaved bonito and add a bit of miso at the end. Soft boiled eggs on the side and maybe half an avocado shared between me and my little one and I feel somewhat complete? Anyhow, with so many creative and nourishing minded people here I hope to get some good ideas. =)

    Hi. I have been lurking for a bit and find your website so intriguing and helpful. I have not graduated to full organic or totally healthful yet, but learning. For breakfast I like “Big”. Start with diced onions, peppers, celery, broccoli. ( all of these, some, or any combination ) Stir fry the above for a bit and can even add small chunks of tofu or chicken or ham, if you eat such foods. Hubby does.
    Remove from pan and add more olive oil to pan and scramble eggs or if you do not eat eggs you can use egg substitute, or brown rice. Serve with cheese on top if desired, along with toast and black or green tea. The stir frying can be done the night before or you can even do ahead of time when you have ingredients and freeze for times like this when your short on time. This will hold one 5 or 6 hours. ( sorry this is long )

    I don’t quite get the carnival thing, but one recent breakfast discovery:
    I rough chopped very small: onions, mushrooms and broccoli and sauteed them in a bit of olive oil. Then I beat some eggs with cream and salt and poured it over the veggies. When the bottom cooked, I flipped it and topped it with a bit of cheese. It was marvelous!

    Just a quick note to my prior post. I meant to say after the eggs are scrambled a bit (like just before setting ) you add back the veggies and stir all together. Good that way or of course you can eat the veggies on the side, but I like it best all in one. Thanks! Enjoying hearing all the breakfasts ideas. Thanks, Kimmie!
