I was first introduced to Pure Indian Food’s amazing grassfed ghee at a Wise Traditions conference. They had a breakfast fundraiser where large pots of oatmeal were served with a huge variety of toppings, and some of Pure Indian Food’s ghee was set out. I instantly fell in love with their ghee in general, and especially loved their “digestive ghee” on oatmeal (it is so nicely spiced that I could just use that on my oatmeal with no sweetener). There were many lovely companies at that conference, but I had limited space in my suitcase. This poised a problem as to what to bring home with me. However, I did end up with a jar of their ghee in my suitcase, which says something about how much I liked it!
I love their plain ghee too, and was tickled to find it available at a local co-op storefront in Portland. Ghee is a type of butter oil produced by melting butter over low heat until the milk solids settle on the bottom of the pot, and the butter oil can be separated. Because ghee is basically lactose- and casein-free, even when I have been unable to tolerate any other dairy products (including butter), I have been able to tolerate ghee well. And let me tell you, that has been a huge gift!
This ghee, made from grassfed butter for better nutrition, is a great addition to a Weston A. Price diet protocol. As you will remember, Dr. Price recommended butter and butter oil made from the milk of cows eating fast growing green grass. What I love about this company is that all of their ghee is made from cows eating fast growing green grass! We should expect a higher vitamin content in butter or ghee produced during the spring or fall (and that is why is has such a lovely yellow color).
And it’s great for the cook too, because ghee is a very stable fat to use, even at high temperatures! This traditional ingredient is lovely to use in so many ways –whether adding it to baked goods or as your fat-of-choice when cooking on the stovetop (such as sautéing vegetables, or for oiling the pan when making pancakes). It has a very rich, almost nutty flavor, and a little goes a long way.
So all to say, I was thrilled to hear they were expanding their line of products to include some new variations. Today I get to review AND giveaway their cultured ghee and their new Primalfat: Coconut Ghee.
First, their cultured ghee. (Please note that they have changed labels since I took the above photo at the beginning of the year.) This is a wonderful product for several different reasons. First, culturing the butter before it is turned into ghee allows the lactose in the butter to turn into lactic acid, which makes this product even more digestible for those highly sensitive to dairy. (Note: I have always done just fine with their original product, but some people are even more sensitive than I am.) Beyond that, this product is a little more “buttery” in flavor and has more tang as well, giving it culinary value as well. I was so excited about this product because it not only allows you to get a slightly different ghee flavor, but it will also allow open the doors for more people to enjoy ghee.
Their other new product, Primalfat: Coconut Ghee, is pretty awesome as well as it combines two of my all time favorite traditional fats. Long time readers know that I use coconut oil a LOT. This product is a mixture of the rich and nutty flavors of ghee, with the sweetness of an organic virgin coconut oil. Here is Pure Indian Food’s description: “A 50/50 blend of Organic Grass-fed Ghee and Organic Virgin Coconut Oil. This is truly a delicious, powerfully nutritious natural cooking and baking blend that we think you’ll love. Coconut oil has a low smoke point, limiting its uses in cooking. Blending with ghee naturally increases the smoke point, making our Coconut Ghee ideal for higher-heat cooking. Ideal for baking, sauteing, stir-frying, and more. It adds delicate, exquisite flavor to all of your favorite foods and recipes without an overpowering coconut flavor. Best fat/oil for all of your cooking!”
I used it in a soup last night when sautéing my vegetables for the soup, and was really pleased to note that it didn’t make the soup taste at all “coconut-y”. I can’t wait to try this out in baked goods too! I think it was a great idea to combine the two personally, as it creates a great basic fat/oil to use on a consistent basis.

I hope you can clear this up for me. It is my understanding that coconut oil can be used for high temperature cooking and is one of the best. I was shocked when I read that it has a low smoke point! I am including a quote from a Dr. Mercola article: “So, whenever you need an oil to cook with, use coconut oil instead of butter, olive oil, vegetable oil, margarine, or any other type of oil called for in recipes. Even though I don’t fully recommend frying foods, if you must fry, by all means use coconut oil — it’s your smartest choice.”
