Last week, was the unofficial bean week, my recipe included. It must be that Fall air starting to make us crave bean soups, because it seems like half of us were making bean soups last week!
Be sure to check out everyone’s great bean recipes from last week, but the one I am going to highlight is actually not a bean soup, but a beef stew recipe! Now that I’ve stuffed myself full of beans, I am really for some meat, I think. So this recipe stood out to me! Simple, frugal (though not quite as frugal as our bean soups), and nourishing, it sounds sure to please. Thanks, Moms for Safe Food for the delicious recipe!

While the oats aren’t soaked (and therefore still contain the phytates), they are still a better alternative to sugary, extruded cereals. They cook up quickly and are easy to make at work, home or wherever you need to be.

The first night, we topped them with homemade chicken soup. Then the next day, I reheated the leftover noodles in a bit of water on the stovetop, to steam them back to warmth. We topped those with beef stew.
