    Good morning Kimi, I’m including a basic zucchini muffin recipe which my daughter Leah made and decided to add many fillers and toppings. I also have another post about our homeschooling journey as Leah “Keeper of the Home Apprentice ~ in our Kitchen” http://pebblecrossing.blogspot.com/2010/06/keeper-of-home-apprentice-in-our.html . As usual, being led by the grace of God we continue to be amazed what He is showing us.

    I’m often surprised how a few flavors in a sauce can make a huge difference to a vegetable. I added some healthy fat (olive oil) to a head of cauli and a few spices to make an irresistible cauliflower side dish. enjoy! thanks for hosting.

    This week I posted a tutorial on how to make jam and can it so you can have it available year round. I use white sugar in my recipe, but I tried to show the whole process so that if anyone is afraid of water bath canning they can see how easy it is. There are a ton of other recipes that are healthier that you can make once you have the steps down. Canning is a great way to preserve what is in season (and cheap) now so you can have it later. Thanks for hosting this.

    This week I wanted to make a Sourdough Flatbread to go with a Curry dinner we love. These turned out soooo good. And they are super easy starting with our everyday Sourdough bread dough.

    I linked up a recipe for grain-free bread that I just discovered. Using flax seed and almond flour, it doesn’t necessarily sound frugal, but it uses little of these ingredients and a small loaf goes a long way due to its nutritional density.

    Yay! I finally figured out how to make soaked waffles and they were yummy and soft. I served them with butter, flax oil and maple syrup with a fresh berry salad. Here’s what I did. Next to figure out how to make them dairy free. ;o)

    Soaked Whole Wheat Waffles

    The night before, in a large bowl combine
    2 cups wheat flour (I used white whole wheat)
    2 cups buttermilk
    and set aside till morning.

    The morning of, in a medium boil whisk to combine
    1/4 cup oil (I used melted, cooled coconut)
    2 eggs
    and set aside.

    Add to the buttermilk/flour bowl
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    and egg mixture
    Whisk to combine.

    Bake in preheated waffle iron according to the manufacturers directions.
