First, thanks for all of the best wishes on my class this last Friday. It went so well and was great fun. I really enjoyed being able to not only demonstrate a few recipes but also to be able to share some of the principles we can learn from history for both frugal and healthy living. I somehow got through the night without taking a single picture though! I will have to remedy that this next Friday as the classes continue.
I also plan on sharing one of the recipes from this last class soon. A delightfully chocolate pudding cake. Yum! (And it’s frugal too!)
The other exciting item in our week, was a little mini trip to the beach. Despite the fact that our sleep cycle (for all three of us) had gotten off, and we were all a bit tired, we had a wonderful time. My husband didn’t want me to have to cook all of our meals while we were gone, so he took us to a very nice cafe, and we had the most wonderful food. After which, we spent some time reading and playing on the beach.
And Elena, our two year old, was even brave enough to stick her toes into the very cold Oregon Coast water.
We had amazing weather.
And though it sounds so unoriginal to say, it’s true that standing in front of something so vast, beautiful and dangerous, like the ocean, puts yourself in perspective- in a good way, I think.
What is it about the beach that is so relaxing, but can be so awe inspiring too? By the way, if you want to be awestruck by the wonders of our created world, check out Blue Planet. It’s absolutely amazing!

Hi Kimi. I was just wondering if you had a favorite brand of that Jasmine Green Tea that you had commented about on my tea post? I’ve never been a big green tea lover, but that Jasmine Green Tea sounds pretty good. I saw some at Target (Archer Organic Brand), but I don’t really think of Target for organic foods so I wondered if you had a brand to recommend?

The day at the coast and eating out at the cafe sounds really super. We aren’t that big of fans of the Oregon coast because it is usually too cold and windy! But we have nice memories of occasional trips there and from when I was in college (when I used to go more often).
We’ve had nice weather this weekend, which has found us doing outside projects. Hopefully one of these days, I’ll have a nice barn to show for all these days of hard work!

My husband stole us away on Friday afternoon to “beat the heat”… it’s been running in the upper 90’s here, and we were all ready for a break from that! We ended up driving into Oregon (went hiking at the Oregon Caves :)), and then back down the California North Coast… SO beautiful! And foggy, and rainy, and blissfully cool! 🙂 Even with 18+ hours in the car, it was still a wonderful weekend!
I’m so glad you had a chance to relax after your class, and that it went so well! I’m very much looking forward to your recipe for chocolate pudding cake! I’m so fond of pudding it’s not even funny. 🙂 (And I totally talk myself into it with “But it’s NOURISHING!!” 😉 )

Great picture of your daughter Kimi-how cute! The Oregon coastline, although rugged, looks pretty to me. I see you can drive down to the beach which must be nice. I go to the Jersey shore and have since I was a kid – I experience withdrawals if I don’t get to the beach during the summer. We also have a boat which we keep on a local lake near our house. We launched it on Saturday, went for a nice boat ride and ate lunch in the middle of the lake. It’s still been quite cool here in the Hudson Valley (NY) with only some hot days thrown in. Still waiting for summer to come.

Oh, how I would love to go the beach right now:) My family did enjoy a day at the pool yesterday though. It felt so good just to relax and soak up the sun–although we got a little too much of that.

I really enjoyed your class! One of the best parts was eating the food! You truly “nourished” us! As you know I am a teacher too and I really appreciate all of the thoughtful planning that went into showing us each step of the food preparation. It was like being in the studio of a professional cooking show. I look forward to the next class. Because of your class, I got my ice cream maker out and am planning to make strawberry sherbert! What is the coconut cream you mentioned above? I’ve tried using coconut milk in my tea, and it kind of curdled. Didn’t make me feel like I was having real cream!
