I have always loved snack or power bars. They are easy to grab, easy to eat, and fun as well. When I was in college, I would often bring Odwalla bars with me (this was before my Nourishing Tradition Days). I liked them, but I noticed that the ones with a lot of soy protein in them, didn’t taste good or sit well with me. More recently, I found that there are some great bars that are just fruit and nuts, and they have been very nice, but are to expensive to buy often, and a little to sweet for me with all of that fruit.
Looking for a healthier, more frugal option, I have tried to find some good recipes for homemade versions, but they all had ingredients I didn’t want to use. High sugar content, puffed cereals, unsoaked, and uncooked grains, etc. So I was thrilled to find that Elana at Elana’s Pantry had a scrumptious looking power bar that was based off of nuts, nut butter, and coconut flakes and oil and chocolate. I had to try it.
It was wonderful. In fact, I *ahem* overate our first batch because they were soooo good. With a nut and coconut base and a chocolate topping, they reminded me a little of a candy bar. They are perfect for a quick, filling and nourishing snack on a busy day. My mouth is watering just thinking about it!
I used soaked and dehydrated almonds for a better nutritional value. I haven’t had the best luck yet in making my own “soaked” nut butters, so I used a roasted almond butter (for better taste, but also because my stomach can handle roasted nut butters much easier than raw ones). I used unsweetened chocolate, and sweetened it myself with agave syrup. I accidentally used twice the amount of chocolate on top (so keep that in mind when looking at my picture), but all that extra chocolate certainly didn’t hurt the recipe!
It is a no bake dish (except for melting your chocolate) as another plus, so it won’t even heat up your kitchen on a hot day, and it is so easy to make.
Check the recipe out, and consider trying it yourself. I can pretty much guarantee you won’t be disappointed.

As far as carob over chocolate. I think they both have different advantages nutritionally speaking. Raw cocoa is probably best, while carob should be bought toasted or roasted. I personally enjoy cocoa in a variety of desserts(and usually not raw, just because of cost factor). I should do a research post on it and get back to you to really be able to show both sides of the story. 🙂

Thank you for pointing me to this. I really appreciate it when someone uses someone else’s recipe and posts a review of it as you did. I am thinking of making a double batch of these since I am looking at giving birth within the next month or so. Any ideas on whether or not to freeze, how long they last in the refrigerator, etc. The protein and coconut would be great for quick snacks for a nursing momma. The chocolate would be nice too since I love it, but haven’t been able to enjoy it since becoming pregnant again.
Also, I wanted to say I frequent your blog and have loved all of your recipes. I also really appreciated your above post regarding recipe policies. Yours is basically mine as well, except you post wonderful recipes and I simply link to other people’s wonderful recipes :).
One more question (since I haven’t rambled enough)… any thoughts on food for nursing mommas. I have a freezer full of grass fed beef roasts, soaked bean soups and chicken and quinoa, but would appreciate any other ideas. Thanks for your wonderful blog!

What kind of chocolate do you use? and with your post about the dangers of Flax seed and oil, are/do you use a substitute or skip them?

Hi Kimi, I have just recently found your blog. It is wonderful!! I’m also enjoying your class. You and your Husband do a wonderful job!
I have tried to reach the recipe for these bars and I am getting something else. Do you either have the original recipe or the URL # so I can try to get into it that way. I know this post is old and I’m not sure you still monitor this or not. I would so like to hear from you so I could get this recipe. It looks and sounds like something my family would like. We try to eat nourishing nutrient dence foods, and I am always looking for snacks that help the different ones in the family get something like they enjoy. Hope I can still get this recipe. It sounds like something my family could use out on the land when working sooo hard!!!! Thanks for everything you do. You’re so young, so busy with a young family and still have a great handle on what is important for your families health. I am really impressed with what God is doing in your young families life. I made these yesterday, and while the flavor was pretty good(not great), the nutty bottom part of the bars completely falls to pieces 🙁 it doesnt bother my 2 year old at all, although he mainly eats them for the chocolate(kids!), but the hubby doesnt like how messy they are to take to work. I think it needs more of a binding agent or something, the coconut oil and peanut butter doesnt do the job.
