I was certainly inspired by all of your wonderful additions to the Nourishing Portable Food Challenge. You all had wonderful ideas and recipes to share! Thank you so much for participating. It was so helpful.
Stephanie gave me an idea that I had never thought of before, sending homemade meatballs! I would definitely enjoy them cold, I know. I was even thinking that a meat ball sub sandwich would be a great lunch (and help you avoid the costs of expensive lunch meats!). Anyone have any favorite meatball recipes to share?
Laura had an awesome looking black bean salsa that looked nice and filling (and easy to make!) and Lindsay had some great suggestions for portable food for babies. She mentioned a favorite of our house: bringing along leftover pancakes! I especially like the sourdough pancakes on this site, but any recipe works well. Heather mentioned hummus, as many of you did. She had the wonderful idea of serving it with rye bread and cucumber slices. It sounds like a wonderful combination. Christian reminded me of breakfast burritos, a delicious easy food (I actually want one right now!). I also thought that Carrie’s sunflower seed brownie recipe sounded very interesting. And I wasn’t even aware that you could make your own beef jerky!
I think that Michele at Frugal Granola and Sarah, at Sarah’s Musings, won the prize for the most thorough advice! I was amazed out how many wonderful ideas they had! These are two creative and organized ladies. Check out Michele’s and Sarah’s posts for some wonderful advice.
Thank you again, everyone, for being involved in the challenge. It was quite fruitful!
I also wanted to mention a wonderful opportunity for all of you Sally Fallon fans. There is going to be a conference on September 12th in Michigan, featuring Sally Fallon and many other wonderful speakers. It’s actually a fundraiser for a man who lost his wife (shortly after she gave birth).
So not only do you get to hear some wonderful speakers, but you are supporting a good cause! I personally would love to go, but with a toddler, a husband in college, and tight finances we just weren’t able to swing it. But if you are interested, go here to get more info. I envy all of you, who are able to attend. 🙂
