I don’t know if any food invokes nourishing, rustic, beautiful pictures in my mind more than soup does. Ever since I learned how to cook, soups have played a major part in my cooking. I love everything about them.
I am one of those people who enjoy comfort. I like my clothes to be cute and stylish, but comfort is always top priority. I like my home to be clean and tidy, but sterile? Never, that wouldn’t invoke comfort to any of us. I like my food to be nourishing, bright, and beautiful, but also to bring comfort to those who eat it.
Soups not only nourish, but they bring comfort to the diner. That’s important to me. Life can deliver some hard knocks, food shouldn’t be yet another blow to the head, but should instead give not only sustenance but comfort.
I also love that soups can be so very frugal. Soups have helped many less than rich people make filling meals for hundreds of years. Traditionally soup was often made from leftovers or from what was on hand. I appreciate that aspect as well.
Overall, there is very little not to like about soup. It fulfills all of my criteria for what I want to serve at my table.
So let’s share those nourishing soup recipes!

Nourishing Soups and Stews
I will start by sharing my Yellow Split Pea, Kale and Italian Sausage Soup. Flavorful, colorful, and yes…comforting, we enjoy this soup very much and hope you do too.
LizzyChristine at Uplifted Eyes, shares her husband’s recipe for Taco Avocado Chili, which looks like a simple, protein full chili, perfect for hearty appetites (I love avocados in soup, by the way, it’s just delicious)
On Mom Must Write, Stacey shares a Black Bean Soup with Chard and Sweet Potatoes, that sounds nourishing and delicious. She cooks her beans in bone broth for added flavor and nutrition.
Kelly at Kelly the Kitchen Kop, shares a recipe for Homemade Organic French Onion Soup. A very gourmet soup choice.
At Redheads and Rubber Ducks, Charissa shares a lovely recipe for Creamy Vegetable Soup. A comfort soup, for sure!
Megan at Real Food, Real Lives, Real Simple, shares a nourishing recipe for garlic soup. This soup boasts 16 garlic cloves plus several other vegetables, all cooked in a chicken broth. Nourishing and Yummy!
At Vehement Flame, you will find a recipe for Couscous with Seven Vegetables, which has a lovely array of spices and some special ingredients added to it.
Russel, from Raw Fusion shares a raw soup for Tomato Basil Soup, which he says is easy and fast to make, and uses just a few ingredients.
Michele at Frugal Granola posted a recipe for Salsa Black Bean soup, a nourishing, from scratch soup recipe, including a recipe for chipotle salsa that sounds delicious.
Shannon at Simple Natural Nourishing shares an hassle free crockpot recipe for Slow Cooker Green Chicken Chili with Kale. A filling, warming soup for a busy day.
Michelle, at She Looketh Well, has two recipes to share with us today. First a Vegetable Beef and Sausage Soup, which would be sure to please as a main dish soup. Her second soup is a nourishing tradition style Split Pea Soup (one of my all time favorite soups), she includes turkey “ham” in it to replace the usual pork. Sounds good!
At Dancing with My Father, Angela shares a beautifully photographed recipe for Spicy Southwestern Potato Soup.

Shannon, at All Things Health, shares a recipe for Curried Sweet Potato Soup, which contains not only sweet potatoes, and curry, but lentils and tomatoes for a filling sounding soup.
Jill shares a recipe for Creamy Green Winter Soup, which she says, “Its thick and creamy even without any dairy added and the herbs give it a rich warm wintry taste. its pretty frugal and super nourishing.” Sounds great!
At Cook 4 Seasons, Karen shares a recipe for a butternut squash soup that sounds creamy, nourishing and delicious.
Peggy shares a recipe at Thyme for Thought for Polish Style Vegetarian Mushroom Barley Soup. and Michelle at What Does a Body Good, shares a recipe for Chili that she says “works with you”, a flexible recipe that can use what you have on hand.
And One Busy Mom, shares two recipes, one for Oxtail Soup, which she says is flavorful and hearty and the second is a recipe for a Potato and Leek Soup.
Kimberly from Hartke is Online, shares a slow cooker recipe for Coconut Turmeric Chuckroast that uses coconut milk. It sounds like an extremely satisfying and yummy meal. Thanks Kimberly!

Yummy! I’ve posted a spicy southwestern potato soup for you to enjoy!!
Polish Pickle Soup
**(for brined pickles only – not dills!)
5-6 C stock – a mix of chicken and beef stock is best.
2-3 medium potatoes chopped as you like for soup
2 carrots chopped or sliced as you like for soup
2 T flour
1/2 to 1 C sour cream
3 large pickles from brine, shredded
up to 1 C of brine from pickle jar
Chopped fresh dill (approx 1 Tblsp), Salt and Pepper
-Heat stock in a large pot until boiling
-Add potatoes and carrots and cook until tender
-Turn soup down to low.
-Add shredded pickles.
-Add brine slowly and check for taste before adding all liquid. It should
be sour but in a refreshing way – not an overpowering one.
-Mix sour cream and flour together in a separate cup, add a ladle or two
of hot stock and mix thoroughly.
– Take a metal sieve and push the flour/sour cream/stock mixture
through the wholes into the soup and stir to combine. Heat for a few
minutes more, but do not boil once sour cream has been added.
-Check flavour and add chopped dill and salt and pepper to taste.
I actually found my favorite soup through a link in your blog roll to 101cookbooks.com. Heidi has a soup called Rustic Cabbage Soup that is both frugal and sooo very tasty. It is beautiful in its simplicity. Ingredients are:
1T olive oil
big pinch of salt
1/2 lb of potatoes, diced
4 cloves of garlic
1/2 yellow onion, diced
1 cup of your favorite beans
5 c home made chicken or veggie stock (I find this the key to good flavor)
1/2 med cabbage
fresh parmesan grated on top as a garnish

I tried the Vergence Ranges pumpkin soup for lunch today and it was wonderful! Very easy to make, tasty, and nourishing. I plan on reducing the leftovers some for a sauce (there wasn’t much left!)

The French Onion soup was delicious. I made a big batch and froze individual servings, as my other half will not eat an onion to save his life. That’s ok I ate it and loved it!
