Nourishing Easter Recipes

Easter is quickly approaching, so it’s time to think of what we are going to make! I wanted to share just a few nourishing recipe links and ideas with you today. But I would love to hear from you too! Please feel welcome to share what you are planning to make and share recipe links too.


Vegetable Sides

Springtime is coming and so are vegetables! Celebrate with lots of fresh young vegetables.

Garlicky Green Beans– Greens beans similar to this recipe usually grace the table whenever we get together with Joel’s family. You can use dried basil instead of fresh (and the vinegar is optional). Just make sure you don’t overcook the garlic!

Roasted Asparagus
-One of my favorites! Roasting really brings out the flavor. So delicious.

Of course, braised artichokes sound good too! Here is a video showing you how to make it.

Egg Dishes

The traditional symbol of spring, the egg! Delicious, nutritious, and “in season” right now.

Herbed Baked Eggs-These are so simple to make, yet so delicious and special. Try them! You’ll like them.

Fluffy Baked Eggs with Roasted-Vegetable Hash This recipe found at Epicurious  sounds absolutely delicious! Fluffy, cheesy baked eggs topped with a roasted vegetable hash. Yum.

Food Blogga’s recipe for recipe for Swiss Chard, Potato, and Parmesan Frittata sounds wonderful as well. Just one look at her beautiful picture makes me hungry!

Deviled Eggs with Radishes, Chives and Thyme, I will be playing around with this recipe, as it sounds great! I love the additions it has.

Other Brunch Ideas

Chicken Apple Sausage An easy to make homemade sausage. Everyone in my household loves this sausage!

You’ll need some biscuits to go with the eggs and sausage. These soaked whole wheat biscuits are wonderful!

These basic soaked pancakes are light and fluffy, and whole wheat!

Savories

Cheeseslave recently posted a drool worthy recipe, Bacon Wrapped Dates which makes a great appetizer. It’s the classic combination of salty and sweet. Yum!

Lamb is wonderful for Easter. Watch a video showing how to roast lamb shoulder. Or look at the delicious search results of lamb at Epicurious for some inspiration!

Sweets

Fruit Gelatin makes a wonderful sweet side dish (so much better for you then Jello dishes).

My recent recipe for Lemon Sponge Custard would be a natural fit on Easter. Decadent and delicious!

Finally, Heidi from 101cookbooks also shares some Easter worthy recipes too.

    Yum!

    We’re doing ham with scallopped potatoes (I make mine by scratch with a gruyere cheese sauce and caramelized onions), roasted asparagus and a baby spinach salad with strawberries, pecans and a balsamic vinaigrette – and several cranks of fresh black pepper (strawberries and pepper do wonders together in a salad, I don’t know why!). Yum!

    We are also doing a simple brunch with whole grain bagels, cream cheese, smoked salmon, capers, red onion, etc. and a big batch of scrambled eggs. The bagels aren’t our usual fare, but they are a special treat in my house.

    We’re also having a ham, scalloped potatoes, roasted asparagus, deviled eggs and dinner rolls. Sarah, I would LOVE to have your recipe for the potatoes!

    My family is visiting and I’m always expected to make sausage gravy and biscuits. Kimi, I will be trying your soaked biscuit recipe. Can’t wait.

    We’re having two Easter celebrations. Saturday afternoon we’re getting together w/my family and bbqing pork chops & chicken. I”m going to make the Pioneer Woman’s turnip augratin since turnips are still coming in around here and it’s a good potato substitute.

    Sunday I’m going to make low-carb crab cakes (which are a decadent treat!) that I will top with crawfish ettouffee. I”m not sure what sides we’ll have since we have a pick up at the CSA on Saturday. Probably some sort of lettuce, maybe beets, maybe green peas?? Who knows. 🙂

    On Monday we’ll be having egg salad to use up the many boiled eggs we’re dying Saturday. 🙂

    I don’t really ‘do’ Easter but I like to remember my grandmother this time of year. Her Easter table was splendid, full of homemade pies and Italian specialties. It’s really a shame how unhealthy most of it was, but it was made with love and tradition and I miss it terribly.

    Pastured pork roast, asparagus and fava bean quinoa “risotto,’ and strawberry rhubarb crumble is on our menu at the mountains (Lake Tahoe.) We just got a blanket of new snow…yeah, spring skiing AND eating!

    The bacon wrapped dates recipe makes me think of one of my favorite appitizers – Bacon wrapped prunes. Exactly the same recipe, only replacing the dates with prunes. They are soooo good.

    I ventured bravely forward =) and tried the bacon wrapped dates on Easter … took them to grandma’s dinner, no less. And they were AMAZING!! A complete hit, and I’d wished I’d doubled the recipe. Even my handsome, picky 24 yr old brother tried one, exclaimed how fabulous it was, then when he found out what it WAS (dates, eeks!) thanked me for not telling him first what was wrapped within that bacon.
    I will be making this many more times- thank you for linking to this!!
