As much as I love chicken salad and roast beef sandwiches, sometimes a veggie sandwich is just so refreshing! I find they are especially nice on warm, hot summer days. They are great for variety too, because there are so many options. I like to pack mine up with as many veggies as I can fit into it. I will share what this yummy sandwich is made with, and give you a list of options for your preferences.
I try to use what I have on hand (this sandwich is an example), but for a great mix of flavors, you can also think of different common food combinations and try to incorporate that into your sandwich. For example, you can make a Greek One with feta cheese, olives, cucumbers, tomatoes, and lettuce (this would be especially good in pita breads). A simple Italian one could be mozzarella cheese, topped with basil and tomatoes, fried in a pan with a little oil on the stove top.
You can also slice up all the veggies, cheeses and put out different spreads and have people make their own sandwiches at an informal gathering. It’s fun and a great way to eat your vegetables.
Make Your Own Veggie Sandwich
I used:
Homemade sourdough bread, sliced
Spread with Homemade Mayonnaise (This recipe is delicious! Thanks Amy! )
My filling:
Kalamata olives
Sliced avocado
Sliced cucumber
Sliced radishes
Green lettuce
Cilantro
Mushrooms, pan fried in a little oil
Other ideas:
Spreads:
Hummus
Cream cheese (plain or with chopped herbs)
Herbed butter
Olive spread
Other Vegetables and toppings :
Red Pepper (roasted or fresh)
Variety of olives
Cheddar, provolone, pepper jack, or cheese of choice
Sprouts
Sunflower seeds
Basil, Thyme or other fresh herb
Grilled Onions
Tomatoes (fresh, grilled, roasted)
Breads:
Pita (great for stuffing unruly small vegetables in)
Big loaf of French bread (slice down the length of it, fill with your goodies, and slice into individual sandwiches)
Tortilla (stuff and wrap, cut, if desired, into small bite sized pieces)

this is nice! I randomly thought of the idea of making a sandwich out of spring greens and hummus a couple of years ago while in undergrad and right before a BIG exam and I remember taking the first bite, chewing chewing, swallowing and feeling a burst of energy flow through me (I was v. sleep deprived at the time). After that, I only really ate them before exams for that extra boost but stopped after I graduated. Yeah I know totally random story. Anyway, I will start again and I’ll definitely use this recipe!
