Two summers ago I released my first cookbook, Fresh: Nourishing Salads for All Seasons. My main objective was to have practical, delicious recipes that used nourishing ingredients. I challenged myself to do the whole salad cookbook only using raw apple cider vinegar and balsamic vinegar to simplify ingredients (I also used fresh lemon juice), and was surprised to find that the two were not only adequate but gave me a wide range of flavors to use. (And I loved that it kept my cupboard staples simple!).
