The last few times that we have eaten with my husband’s family, we have enjoyed this simple, but scrumptious dessert. Fresh local strawberries are just coming in around here, and they are, oh so sweet. They are absolutely wonderful with chocolate ice cream. And the toasted nuts adds a nice crunch and flavor.
We were having some friends over this week, and I didn’t have a dessert planned, but did have some strawberries on hand. I couldn’t resist preparing this (even though we just had the night before at my in-laws!) It was easy to prepare this quick dessert, for a cool treat at the end of our meal. It totally works for us!
You can use whatever chocolate ice cream you want. We like making our own chocolate ice cream using coconut milk, but store bought works as well. If you notice in the picture, this was dished into small ice cream dishes. This helps us stretch high quality (read expensive) ice cream a little further. I realized that it would look pretty pathetic to dish two small scopes of ice cream into our large soup bowls. And we definitely couldn’t afford to give everyone a full bowl of ice cream. So this has been a pretty solution. It is probably a more accurate dish for one serving anyway, and helps with portion control. Though I do admit, that I usually want a large dish of my chocolate ice cream. A desire I indulge in sometimes….
Chocolate Ice Cream with Fresh Strawberries and Toasted Nuts
What you need:
Chocolate Ice cream
Fresh strawberries, wash, de-stemed and cut into bite sized pieces
Bananas, optional, sliced
Nuts (almonds, walnut, pecans, hazelnuts or whatever you want)
Chop nuts into a medium size. Place over medium high heat in a heavy saucepan, and toast, stirring, until you can smell the nuts toasting and they are lightly browned. Watch carefully, so as to prevent burning.
I put the strawberries on the bottom, with the optional bananas, scoped the ice cream on top and topped with the toasted nuts.
