When I was around eight, my mother got her own grain mill and bosch mixer. On a regular basis she starting turning out homemade whole wheat bread. One of my most fondest “food” memories from my childhood include waiting impatiently for the bread to get done (the smell of homemade baked bread would fill our house) and then slathering on butter and homemade strawberry freezer jam on warm bread and savoring every bite.
It was so good that even I, as an eight year old, knew that something was dramatically different about it compared to store bought. One big reason it tasted so delicious was because my mom milled her own wheat in her electric grinder. It doesn’t get much fresher than that!
Later I learned a few interesting facts about grinding your own grain.
* Freshly milled flour contain more nutrients. Until grains are milled the nutrients are kept relatively safe. But after they are milled, the nutrients can start to lose value quickly. I even read that they could lose up to ninety percent of some of the nutrients in 72 hours (though I was unable to find a study to back that up). Store bought flour can be fairly old and therefore not as nutritious.
*Freshly ground flour won’t go rancid. There is nothing worse than rancid bread, truly. And rancid flour is not good for you either. Whole wheat flour is much more likely to go rancid because it still contains the germ oil, so whole wheat flour is much more perishable than white flour. One more reason to grind it at home.
*Freshly milled whole wheat flour contains more phytase (which is what reduces phytic acid in your bread). According to Amanda Rose’s Ebook on phytic acid one study showed that the phytase levels of flour was higher in freshly ground flour when compared to stored flour. Since reducing phytic acid in bread is important, this is a consideration for home bakers.
I have long been a fan of home ground wheat flour, though I haven’t had the greatest success with my own grinder (it’s a Jupiter), so I wouldn’t want to give that model away. (By the way, am I the only one who has had trouble with the Jupiter grinding the flour really coarse? The flour isn’t workable at all for some projects! I don’t know if it’s the grinder or me). So I was thrilled to give away a better rated grain mill, though it once again left me in the position to be jealous of the prize! I find myself being in the position of needing a new grain grinder, so this grinder is on the top of my list of considerations!
