Nutrient Rich Snack: Dried Anchovies

I have a personal policy that I will introduce nourishing, healthy, nutrient rich food to my daughter, even if I don’t like it.  I hope that even if I never develop a taste for something, that she will. This has been the case for liver. I can’t say I actually enjoy eating liver, but I try to serve it on a somewhat frequent basis since she has learned to love it and my husband enjoys it as well (I eat it, but don’t love it. Though I am beginning to be able to enjoy it)). So when I found out that Radiant Life was carrying dried anchovies because Sally Fallon had recommended it as a very nutrient rich, traditional snack, I was interested.

It’s not that it really appealed strongly to my taste-buds, but rather  knowing how extremely good it would be for us appealed to me. I decided that next time I went to my local Asian store, I would look for some. Meanwhile, Cheeseslave mentioned eating dried fish with her young daughter as a snack, which encouraged me that it wouldn’t taste too bad!

Delicious Tomato and Eggplant Curry

I didn’t think I liked eggplant. When cooked wrong, it can have a weird texture and flavor. But one of my Grandma’s recipes won me over to it. This was the second recipe to score some winning points on our table. This curried tomato and eggplant dish is delicious!

Once I served it to a guest, saying it was a “vegetable” curry, knowing that he might have second thoughts  if he knew it was made with eggplant. He loved and raved over it. But I forgot to tell him that he had actually eaten eggplant……Later, I asked him if he liked eggplant, he said “No.” I then laughingly told him that he did indeed, in a curry at least!

Everyday Italian Rice Salad

This simple, rustic salad has little golden bites of soft eggs, crunchy celery and carrots, and mild rice, coated with a basil and garlic vinaigrette. Simple but delicious!

I’ve mentioned this recipe in passing several times in on this blog and have always gotten requests for it. It’s one of my stand by dinners that is very frugal and easy to make.

Our Spring Break Mini Trip
