As usual last week we had so many great entries in our Pennywise Platter Carnival that it’s really hard to choose which ones to highlight! One that really stuck out to me was Lindsey’s Chocolate Dipped Candied Orange Peels. . I love how the recipe uses a food item that would normally be thrown away, orange peels, and turns it into a delicious treat! And at Fresh and Feisty, a great dairy free creamy tomato soup was posted. Yummy!

Don’t you hate wasting food?! So do I, and that includes the meat from the bones that I use to make my stock. I’ve found a yummy way to make it so good no one will complain when you serve these leftovers!

My Multi-Bean & Vegetable Soup is a nourishing and frugal meal that is simmered on low all day in the crock-pot. It’s a great way to use up any extra dried beans you have in your cupboard, especially if you have a little of this bean and a little of that bean. You can use any kind of beans, lentils, split-peas, barley…it’s up to you. The soup is especially wonderful (and nutritious) when made with homemade stock/broth. Enjoy 🙂

Apple Delight is deliciously delightful. Clean and simple are the only accurate words to describe this easy to prepare dessert. The slight souriness of the apples is balanced by the sweetness of the raisins. A topping of slivered almonds and whole coconut milk give it crunch and creaminess.
The yin (alkaline) apples, almonds, and raisins balance out any meat meal that’s yang (acid) or high in protein.
