Pennywise Platter is here again!

Last week we had a wonderful slew of recipes. There are two I wanted to highlight-Sara had a great recipe for soup that sounds just like soups I make around here! Featuring kale, sausage and broth, it’s a warming soup for a cool night. Then, I was most impressed with Cara’s post about how she took a little of this and a little of that to make a full meal for her family out of leftovers. Way to go Kara!

This week, if everyone could please make sure that you format your comments like the following that would be great. If you make sure to leave your name and the name of your blog in the actual comment it makes it so much easier for me. Thanks!

Kimi @ The Nourishing Gourmet Five Healthy and Frugal Meals (https://www.thenourishinggourmet.com/2009/07/five-frugal-and-healthy-meals.html) Today I share five meals that are healthy, easy and frugal. They also happen to be family standby’s so you know they’ve been “family approved”. Check them out!

Pennywise Platter

Kimi @ The Nourishing Gourmet

This week I shared my experience of curing my own olives. This is a much healtheir and cheaper way to get nutrient dense olives into your diet!

Katie @ Kitchen Stewardship
Perfect for sharing with a group next time you have to bring a snack, the ease of these throw-everything-in-the-bowl pumpkin muffins/bread is my favorite part. They’re heavy with fall spices and so moist you’ll be sure you’re eating cake – but I give options for healthier upgrades from the basic recipe up to 100% whole wheat and no white sugar.
And now it’s your turn!

Amanda @ The Rebuild Blog

Nothing is more frugal than “free”– I posted on: kitchen strategies to reduce phytic acid in your food. Get more out of the food you are eating.

Cara @ Health Home and Happiness Organic Refried Beans are easy to make in the crock pot

My family loves refried beans, but not whole beans. I make them in the crock pot so I have plenty on hand to add to meals during the week. They’re an easy way to stretch the food money, and I don’t know that I’ve ever met someone who didn’t like them!

Wardeh @ GNOWFGLINS Potato Bowls

Potato bowls are an exciting way to use up leftovers and serve a frugal meal. Not only that, but potatoes are in season right now, so you’ll likely find some local and delicious beauties.

Shelley @ MakeAHomeMom
Homemade flavored vinegars are better than the store-bought ones, and so much more frugal! Ideas for flavor combinations and easy instructions make this idea a must-try.

Julie
This was our yummy frugal dinner last night: (w/0 chicken)

Jen
Baked Oatmeal A yummy and easy – make ahead – breakfast!

Melodie @ Breastfeeding Moms Unite

This is a round-up of Super Foods Recipes that just happen to be easy on the pocketbook too. There’s Winter Squash Soup, Roasted Red Pepper and Tomato Soup, Secret Savory Oatmeal, Vegetarian Hash from Leftovers and a Quinoa, Soaked Mung Bean, Wilted Greens and Cherry Tomato dish.

Millie @ Thinking Outloud– Muffin ‘Formula’

Muffins make a great breakfast or snack at my house. I’ve been using a muffin ‘formula’ for years. I’ve been working on adapting it for soaked grains. Today I’m sharing my soaked muffin formula

Tonight’s challenge was to make something nourishing, tasty and inexpensive using primarily SOLE foods (sustainable, organic, local and ethical).
Ren @ Edible Aria
These chili cheese grits, made from local grass-fed beef and stone-ground yellow grits succeed on all points, I think.

A Modern Gal

A basic simple recipe that’s in my regular rotation during the colder months:

Quick Chicken Chili

Amanda

My new favorite frugal cooking activity is making yogurt! It’s inexpensive and super easy. (And I still get a sense of amazement when I pour in milk, and 8 hours later, it’s yogurt!)

Carrie @ Deliciously Organic

My family loves Larabars but I find them quite expensive. My kids love them so I came up with my own version of “Pecan Pie Larabars”. I cut them into bars and individually wrap them so they are available for a quick on-the-go snack.

Thanks as always for hosting, Kimi! (Did you know you don’t have a link to highlight Sarah’s amazing soup recipe in your intro?)

You’re invited to come on over today and link up an old post in the carnival of super foods at KS, too! 🙂

I posted a reply to Heather B.’s comment in the sugar-free challenge results post but haven’t heard from her. Heather B., I’d love for you to email me about hyperparathyroid because yes, I did have it and had surgery this past summer! I’d love to hear more about your story/exchange stories with you. It’s a rare condition and I don’t know anyone else with it.

    Sorry for the hijack, Kimi!
