Nourishing Portable Food Challenge

The school year is fast approaching and I am gearing up to start sending nourishing sack lunches with my husband as he attends college. This is something that I have found a bit challenging at times, and am guessing that you may as well. I find that I often just do the same things over and over again. So…… it’s time for another carnival!

What’s going on at my home

I have a busy year ahead of me. I will be teaching piano again, trying to get my house back to order as my energy and health continues to improve and take care of my busy, but adorable toddler. We have been told by numerous people who have attended the college Joel is going to, that it is a very challenging . One man told me that the Bible/Theology major Joel is getting was much harder than his chemistry major at another college! So he will be at classes, teaching music lessons, working for our church, and getting in study time somewhere.

I definitely plan on continuing cooking nourishing food for both of us so that we are able to keep up with our busy schedule. While I have had to pack lunches for my husband in the past, he would often take leftovers and reheat them at work. This wasn’t the best option because he did have to use the microwave. But it was simple and easy. I now have to do “sack lunches” as he won’t be able to reheat anything at school. I am glad for the chance to learn new things.

So I am ready to expand my nourishing culinary skills in portable, and nourishing food. And I would love to hear what works for you.

We all need this!

Even if you don’t have to send lunch with children or husband (or wife!), the need for portable nourishing food is going to arise sometime in normal life for you. I know that many of you may have children in school, where nourishing lunches are especially needed. Some of you may homeschool, but still need portable, easy food to bring along to co-ops, field trips, and days to the park. Some of you may need to bring food to work yourself. Some take frequent hikes where portable food is especially useful. We all face the need to have bring-along-food that is also healthy.

So here’s the plan:

*For the next two weeks think, experiment, and try new recipes and new methods that will expand your meal planning abilities for nourishing portable food. Remember that we are looking for both nourishing and portable food. While I am eager to hear what already works for you, I encourage you to breath new life into your lunches by trying out a few new things and sharing those resources with us.

*Get the word out! If you have a blog, blog about this food event and link to this post and draw other people into joining us. The more the better! You all did such a wonderful time with the last food carnival. Let’s make this one just as good. 🙂 Feel free to use the above picture as well.

*Then, on August 27th, I will host a carnival where we will share what works for us. Bloggers can post on their own blog and use the Mr. Linky. Others can share in the comment section or email me with their comments. You can share what has worked for you in the past, and/or what new things you have learned in the past few weeks. I hope that in the end, we will have a rich resource that we can refer to in the future.

    It sounds like your year coming up will be a lot like our family’s. My husband is heading to paramedic school soon, as well as continuing to work full time.

    I have had to pack portable (non-microwavable foods for him over the past year, and sometimes I still “draw a blank!” 🙂

    Too funny, I have never had a carnival, but was just thinking of a “nourishing food on the go” carnival. I desperately need ideas here and can’t wait to see the resulting recipes and ideas!

    This is a great idea! I always have to take lunch to campus, and my husband has to take lunch to work. We generally just do leftovers and eat them cold, but it surely would be nice to have some other options. I love that this event will force me to spend some time thinking about creative options, but I’ll also get to hear other people’s ideas. I’ll post about it on my blog.

    This is exactly what I need- my daughter will be starting kindergarten and there’s no way I’m letting eat that cafeteria food! Yet I’m uncertain of how to make nourshing traditions in a sack lunch 🙂

    This could be a fun challenge. I don’t send lunches with anyone as my girls are homeschooled and hubby just comes home for lunch but…there are times when maybe he wants something packed with him or we could improve on our “home” lunches. I’m a bit under the weather at the moment and feeling very uninspired, but maybe by the time this is rolling I”ll be up to it.

    Can’t wait! My hubby and I are doing the “Eat Fat, Lose Fat” diet by the authors of Nourishing Traditions and I’ve been sending two to three meals a day with him for the past week or two, so I have first hand experience!

    Can you put up a link to this carnival somewhere? The link on your carnival page is routed to the soups carnival and I’ve tried searching by date and name and I can’t find it anywhere! I am dying to find portable meals!

    I am big on small jars or even plastic containers and often carry vegetables. I just pack a lot of veggies into a container, then have a smaller separate container of dip. My fave is a combination of finger food style veggies (radicchio, endive, cuke, tomato peppers carrots celery plus sometimes raw beet slices, radish, turnips), and a handful of lacto-fermented pickles (Kimchi like combinations or pickled beets are my current fave.) For protein I make a simple liver pate as a dip, or 2 hard boiled eggs and a piece of cheese. All can be packed the night before.
    I like to add home made kale chips too.

    Sour cream based dip/dressing doesn’t spoil like mayonnaise will. Could also be a thick lemon tahini: tahini, white or chickkpea miso, lemon juice and garlic. Yum. I don’t eat much grain, but bread or crackers could be added.

    An Insulated lunch box can keep things cool enough for spoilers too. In winter I always carry a thermos of hot chai. With chai, even this cold lunch warms me up.
