Live in the greater Portland area? I would love to meet you face to face at a cooking class series I am teaching in the greater Portland, Oregon area. I love blogging, but it only goes so far. I hope that this class will give me new opportunities in sharing with others. Read about the classes below!

Hard times give us new opportunities to grow and learn.  With a husband in school and finances tight, feeding my family nourishing food on a budget has been a challenge, but it’s been an exciting challenge. To help me in my journey I have tried to glean wisdom from past generations.  Learning from those before us, we discover a wealth of information on how to feast on peasant’s food. Are you interested? I hope so, because I am excited to share with you!

I will be teaching a three part cooking class series on this subject of nourishing frugal food.  In it you will learn:

• Ten lessons on frugal living from the past
• Rustic and delicious main dishes
• How to stretch one chicken into three main dishes
• How to make homemade chicken broth
• Chicken curry
• Homemade soup
• Homemade pasta and pasta sauce
• Homemade salad dressing
• Delicious desserts

I am trying to fit in as many things as I can… can you tell?

The three classes will take place on Friday evenings, from 7 to 8:30-9 PM. The dates are May 29th, June 5th, and June 12th.   The classes are designed to be a series, but you can opt to do an individual class.

Class Descriptions

May 29th, Desserts (Something Lemony, Something Cold, Something Chocolate! Make three desserts with me! More info to come! ) First Three Lessons from History on Frugal Living

June 5th, Stretching One Chicken Into Three Meals, Lessons 4-6 from History ( Roasted Chicken, Chicken Curry, Soup and Broth Making).

June 12th, A Rustic Italian Meal, Homemade, Soaked, Whole Wheat Pasta, Homemade Pasta Sauce, Homemade Salad Dressing and Salad, Plus last 4 lessons from History on Frugal Living.

Prices:

If you wish to attend just one class the cost is 35 dollars per person. If you attend the whole class series the cost is 75 dollars per person for all three classes.

    Dang, I’ll be in Portland July 3rd through 6th I wish you had a class then! My cousin is getting married so that will be fun. I love Portland the people there are so great, mabey I’ll see you at a farmers market while I’m there. Have fun with your classes!

    Have you though of doing a E-book of the classes for those that can’t make it?
    Also, did you see my last comment? Do you feel normal everyday crock pots leech lead?

      There is at least a chance that they do. I have not been able to find a lot of information about it, but I do know for sure that many crockpots do contain lead. 🙁

    About the crockpot question, I have seen others blog about this. Cheeseslave (Ann Marie) said

    Here is the crockpot I have (they say it is lead-free) — you can buy it on Amazon:

    Hamilton Beach 33956 Stay-or-Go 5-Quart Slow Cooker, White

    I LOVE this crockpot. It has a lid that locks so the liquid doesn’t bubble over like the one I used to have. Also, you can set the timer for a specific amount of time.

    If you search her blog at http://www.cheeseslave.com you’ll find other references to the question of lead in crockpots.

    Sounds delightful!!! However I’m thinking the drive (or flight!) from IL would totally negate the “frugal” part of these workshops!!!

    I read on some Nourishing Traditions website (I think it was Weston Price)that the Hamilton Beach white crockpots do not leach lead. Apparently, there was a study done and the only crockpot that didn’t leach lead was Hamilton Beach. I went ahead and bought one just last month based on this study. I have a Rival that I need to sell but I don’t feel good about selling it or giving it away because more than likely it leaches lead.

    I got the Hamilton Beach 7 quart white crockpot from Walmart. I did site to store – I couldn’t find it in stock at my local W-mart.

    Too bad I live in the Denver area – I’d love to take your cooking classes!

    Oh Kimi, if only I were closer to you! Washington, DC is just a wee bit of a distance from Portland. I would definitely buy into an online class if you could make that available! Or, you could be the next ‘youtube’ phenomenon 🙂

I bet you’ll have fun! 🙂 I LOVE teaching healthy eating classes (I really don’t feel experienced enough with NT to teach that style yet!), and I’m amazed at how many people are interested these days! It’s been such a rewarding experience to watch people realize that it’s NOT HARD to eat better. One mama called me the other day to tell me her children were eating whole wheat pizza – and didn’t realize it! 🙂 (Funnier, she was hiding in her room, cos she didn’t want them to overhear and riot ;)) We’ll be praying for you! … and I hope you do blog about the experience… I’d love to hear what happens! 🙂

    OH, I’m going to miss your classes!! We won’t be in Kelso, WA until the 25th of June. We get in on the morning of the 25th and plan to go up to Seattle on the 28th. We fly out of Seattle on the evening of the 1st… If you could recommend any good farmer’s markets in Portland or the surrounding area north I would great appreciate it! I love the rustic Italian menu!!

    Dang I live in the Portland area but will be out of town for both the June classes and I am very interested in the Chicken one and the Italian one as I don’t care for Italian but maybe through your class I could 😉 . I am not a sweet tooth person so I’ll wait and see if there will be another class in the future that may work for me. Have fun with your classes!

    Thanks for visiting and your comment 🙂 So happy you love Coconut Bliss too! It’s a nice treat for me. You mentioned the bars of other brands having cane sugar– I think the ones that CBliss are making are just ice cream on a stick, not actual ice cream sandwiches. I could be wrong though.

    Kimi, this is a great idea! I wish I could attend — it sounds like so much fun.

    I second the idea of doing an e-book. That’s a wonderful idea.

    Also, you might want to publicize your class on Craig’s List and/or MeetUp.com. MeetUp does charge a fee to use it but it’s reasonable and I think you would make the money back from what you earn from the class. You could advertise the class as frugal, slow food cooking or something like that. People who are in your local area will find you on there.

    We set up a MeetUp group for our local WAPF chapter here in LA and we had a great response. I am going to post a guest post by Kimberly Hartke on how to set up MeetUp events on my blog within the next week.

    Best of luck to you on your class. Again, I so wish I could attend — I’m sure it will be amazing!

    I’m doing a series of cooking classes this summer too! I’ve got the curriculum laid out for a series of 12 courses on old school methods of food preservation. It’s a fundraiser for the farmers market my husband and I rung. I hope your class goes well!

    A friend of mine sent me the link to your website and info on the classes; she wishes she could come, but lives in Atlanta. I’m in Olympia, and I’m pretty sure I can make it to at least the 1st class. The rest may be difficult with work, but I may not be able to resist! I’ll have to send her everything I learn!

    I’m new to your site and NT, but I am loving this method of cooking! I had no idea that what I considered “healthy” was actually not. I too would love to attend you classes, but am too far away. I’d be very interested in internet classes if you get them up and running. Also, I was hoping you or anyone would have ideas for healthy but kid friendly school lunches. My nine year old is resisting (and I consider myself a good cook!) what I send her for lunches, she’s always wishing I’d pack her the popular convenience foods all the other kids have. If anyone else has been down this road, I’d love to hear how you handled it!
