We are back in town again after our trip to the beach, feeling a little more rested and definitely ready to get back into our routine! With the 4th coming up quickly, I though I would share a few of my summer friendly recipes. Many of them are perfect for taking to share with others.
Mexican Quinoa Salad: A cumin and garlic vinaigrette dressing coats fluffy quinoa, sweet corn, and dark spinach for a lovely and refreshing cold salad. A family favorite.
Basil Potato Salad: Instead of a rich mayo dressing, this simple potato salad is dressed with a vinaigrette while still warm so that the dressing permeates the potatoes. Simple, but delicious.
Sweet and Sour Ribs: Sticky, sweet, and sour, these delicious ribs are crowd friendly.
Cucumber and Red Onion Salad:This salad is very refreshing. We’ve gone through gobs of cucumbers using this recipe!
Savory Carrot Salad: An alternative to the sweet carrot salad recipes out there, this recipe balances the sweetness of the carrots with a savory dressing. Another family favorite as well as a blog favorite among readers.
Lemon Bacon Deviled Eggs: A savory, fluffy egg yolk mixture tops hard boiled egg whites for a delicious treat. This simple recipe would make a great addition for a picnic! It uses bacon mayonnaise which is easy to make, delicious, and frugal too. The lemon juice helps cut the richness of the egg yolks and the mayo and adds a bright note, and the horseradish mustard gives a bit of a bite. Yum!
Fruit Juice Gelatin: It’s the perfect time of year to make fruit juice gelatins! They are a very refreshing alternative to Jello and completely naturally sweetened. Kids and adults around here love them!
Grilled Corn: If you are firing up the grill, why not grill some corn for an absolutely delicious treat!
Persian Watermelon Salad: Scoops of watermelon are sprinkled with chopped dates and pistachios. With each bite you get sweet watermelon, chewy candy- like-dates and crunchy pistachios with a hint of the exotic which comes from rosewater. The rosewater is dominant, yet subtle. Teasing and suggestive, it brings out the flavor of the watermelon without overwhelming it. A perfect match.
Lemon Curd Bars: Perfect for the grain free crowd, these sweet treats are a fun, protein filled, refreshing treat for a hot day.
Black Bean and Pineapple Salsa: A fun new way to do salsa! Serve with GMO-free corn chips for a fun snack.
Red White and Blue Cupcakes: Coconut flour is the white, and berries make the red and blue in these delicious cupcakes. Some have had success making this into a cake too!
