One of my enormous tasks for this week was updating my Recipe Index. It’s been a very long time since it’s been updated and it feels really good to get it done! (At some point, I want to redo the format of my recipe index, but until then, it will do). Of course, looking over past recipes, I found some recipes that I had forgotten about! I wanted to share a few meal and snack ideas that I thought would be especially appropriate for this back to school busy season. While my almost four year old does preschool at home with me, my husband is starting college again this Monday. It’s a lovely, but busy time for our family. Here are a few recipes I will be putting back on our recipe rotation. Enjoy!
Simple Chicken Noodle Soup is so easy to throw together. My husband made it for him and Elena numerous times when I was sick with morning sickness (Note: He does not enjoy cooking, but found it easy enough that he didn’t mind throwing it together). It does have a long cooking time, but you don’t have to have premade homemade chicken stock for it as it makes it’s own stock as it cooks. I think it could be adapted well to a slow cooker too.
Roasted Meat and Vegetable Dinner. I love the taste and the simplicity of this dinner! It’s easy to throw together and fast to clean up. Perfect for a weekday night when life is crazy.
This simple rice salad is a very frugal and a family favorite. It makes a great meal for the fall when the weather hasn’t yet turned too cool yet.
These spiced macaroons are perfect for the fall and for packing in lunch pails. They remind me just a little of gingerbread cookies and my husband of oatmeals cookies (without the oatmeal!). They are also gluten and grain and dairy free. Coolness.
Another delicious but simple recipe is for sweet almond cookies. These cookies use ground almonds and a few other ingredients to make a grain and dairy free cookie. Yum! Another cookie for the packed lunch.
Or, for even more protein power, why not try…..Delicious honey nut bars! A great alternative to the sickly sweet and yucky ingredient granola bars! These are also grain and gluten free and they are full of protein.
