Only a few days left until Easter Sunday, and it’s raining. I am always sad when it rains on this weekend because Easter should be light and cheery and full of life.
But at least we can still make some yummy food! I put together some of my favorite foods for this time of year and would love to have you share what you will be serving this weekend too.
Turkey or Chicken Apple Sage Sausage Patties These are easy to throw together and super delicious. Great for an Easter brunch or breakfast
Seven Hour Leg of Lamb is a tender, flavorful, super easy recipe that you don’t have to worry about messing up. One of our favorites.
Everyday Italian Rice Salad is a simple (and frugal) side dish that’s light and delicious. It would be special to add some Springy vegetables to the mix like asparagus.
Nourishing Nettle Soup is very flavorful and completely in the realm of a Spring special. It would make a very nourishing first course.
Spring-is-Here Asparagus Egg Drop Soup Bright red peppers, soft spinach, and delicious, in season asparagus float in a rich chicken broth, doted with “egg drops”. This soup was inspired by some beautiful local asparagus I found at the produce market. I feel this soup speaks “Spring” with every bite. So simple, yet so satisfying!
Creamy Asparagus Soup with Gremolata This light asparagus soup is full of earthy asparagus flavor, brightened with the gremolata, a mixture of lemon peel, fresh garlic and parsley, which gives it just the right balance of earthy asparagus and bright herbs.
For a special treat, try Garlicky Fiddlehead Ferns, so delicious! I love these and wish I could make them year round.
Sauteed Spinach with Lemon, Pinenuts and Onions is a very flavorful and yummy vegetable side.
Roasted Asparagus is my absolutely favorite way to prepare asparagus. And it’s so simple and easy too!
On the sweeter side, my family always loved to make Fruit Juice Gelatin for a kid friendly sweet side.
And I know that Coconut Orange “Fudge” has been used as a special candy treat by several families at Easter time (especially those needing a GAPS friendly treat).
