Today was my husband’s first day back to school. We met it with a little regret that our summer was over, but I think that we will also be glad to get back into our Fall routine.
Thankfully, I was able to start the school year out right by having a nourishing lunch to send with him. I was gone over the weekend (and he was traveling), so both of us didn’t get back until yesterday. I whipped up a simple soup for dinner and this morning he left with a steaming thermos of chicken noodle soup, a carrot salad, and a plum.
It made me realize that summer is gone. Truthfully, I adore this time of year. This morning it’s overcast and wet-just how I like it. There is something I just love about cool weather (not cold, mind you) and the warming, hearty foods of fall. I want to jump up and down with joy at the thought of pumpkins, squash, chestnuts, stews, soups, roasts and everything warm and cozy.
We still have a lot of summer produce to enjoy (in fact, I am hoping to can tomatoes this week) and we still have warm days ahead of us. So here is a roundup of some summer recipes to end the summer with. Enjoy!
Asian Cabbage Salad– A light, refreshing salad for a warm evening.
Cucumber and Red Onion Salad– We love cucumber salads, and this is one of our favorites.
Grilled Vegetable Salad – You gotta love the grill. It makes everything taste better. This salad is packed full of delicious summer veggies. I think we practically lived off of it last summer.
Persian Watermelon Salad-Sweet watermelon, chewy dates, crunchy pistachios, and a hint of rose water makes this salad special.
Grilled Corn– So simple, so filling and oh-so-good.
For something special try, Blackberry Cream Gelatin. It’s a dish that really allows the blackberries to shine.
For those of us who still have berries in season, Raw Berry Jam is a very yummy and fun project (and it saves you bunches of money to do it yourself).
Basil Potato Salad -This simple potato salad is lovely on a hot day, or to bring along on an outing. Come to think of it, this would be a great thing to make to pack in my husband’s lunch too!
Yellow Plum Sorbet– Ultra simple ingredients, vibrant flavor. Very refreshing Summer or Fall!
Rustic Fresh Tomato Tart– This recipe takes advantage of vine ripened summer tomatoes for a lovely tart.
Creamy Ice Coffee-We have enjoyed countless iced “coffees” this summer, including Elena considering it was caffeine, dairy and sugar free!
Salmon with Basil Romesco Sauce– I will be tempted to eat this year round, but it’s especially nice in the summer. Nuts, basil, garlic and tomatoes make a lovely raw sauce for hot cooked salmon.
Mexican Quinoa Salad– We like quinoa best in soups and in cold salads. It’s just so flavorful! And in this cold salad, even more flavors are added for a refreshing and yummy salad.
