Tomorrow is Pennywise Platter Thursday! Today I am going to be sharing five frugal meal ideas.
Cold Pasta Salad (pictured above)
With the sun shining, it’s nice to have some do ahead dishes that can be served cold. Cook up some pasta, saute some veggies and make a simple dressing like my everyday dressing, and your work is done! Coat the cooked pasta and veggies with the dressing and chill. All you need to do is toss a little extra dressing over the pasta before serving and you are set to go. For the above dinner, I used homemade soaked noodles made out of kamut flour and added some white beans as well. It was delicious
Chili and Cornbread
Hearty, family friendly, easy to make, and frugal too! In this post, my friend Stephanie shares her favorites recipes.
Curried Sprouted Lentils with Ginger Cilantro Garlic Sauce
To get more nutrition from your dollar, sprout your lentils! This recipe has been a hit with rave reviews. The sauce makes it come alive. Check it out.
Garam Masala Lentil Soup with Coconut Milk
A family favorite! This soup is filling, flavorful and so creamy. It’s nice that it’s super cheap to make too.
Italian Rice Salad
Super easy and super yummy, another family standby that is a budget cutter as well.
There you have it! Five frugal and healthy meal ideas. What about you? Have anything to share? Share with us tomorrow on Pennywise Platter Thursday!
