Springtime is coming and so are vegetables! Celebrate with lots of fresh young vegetables.
Garlicky Green Beans– Greens beans similar to this recipe usually grace the table whenever we get together with Joel’s family. You can use dried basil instead of fresh (and the vinegar is optional). Just make sure you don’t overcook the garlic!
Roasted Asparagus-One of my favorites! Roasting really brings out the flavor. So delicious.
Of course, braised artichokes sound good too! Here is a video showing you how to make it.
The traditional symbol of spring, the egg! Delicious, nutritious, and “in season” right now.
Herbed Baked Eggs-These are so simple to make, yet so delicious and special. Try them! You’ll like them.
Fluffy Baked Eggs with Roasted-Vegetable Hash This recipe found at Epicurious sounds absolutely delicious! Fluffy, cheesy baked eggs topped with a roasted vegetable hash. Yum.
Food Blogga’s recipe for recipe for Swiss Chard, Potato, and Parmesan Frittata sounds wonderful as well. Just one look at her beautiful picture makes me hungry!
Deviled Eggs with Radishes, Chives and Thyme, I will be playing around with this recipe, as it sounds great! I love the additions it has.
Other Brunch Ideas
Chicken Apple Sausage An easy to make homemade sausage. Everyone in my household loves this sausage!
You’ll need some biscuits to go with the eggs and sausage. These soaked whole wheat biscuits are wonderful!
These basic soaked pancakes are light and fluffy, and whole wheat!
Cheeseslave recently posted a drool worthy recipe, Bacon Wrapped Dates which makes a great appetizer. It’s the classic combination of salty and sweet. Yum!
Fruit Gelatin makes a wonderful sweet side dish (so much better for you then Jello dishes).
My recent recipe for Lemon Sponge Custard would be a natural fit on Easter. Decadent and delicious!
Finally, Heidi from 101cookbooks also shares some Easter worthy recipes too.
