Last week, I shared a simple new favorite soup of ours. This week I wanted to share a favorite salad. This salad is loaded with hard boiled eggs (which some of you may have a few extra after this weekend!), bacon and avocado for a rich and satisfying light main salad or side salad.
Springy, soft, slightly sweet eggs are whipped into fluff and cooked-starting on the stovetop and then finished in the oven. Spread a little sweet jam on top, like the raw berry jam recipe which is what we used, and you have a sweet breakfast, dinner or lunch. I love the sweet version, but I bet that savory versions would be delicious too (already have some ideas for it!). It also just happens to be gluten, grain and dairy free! I love how quickly this is to whip up too.

This delightful cabbage salad is so refreshing on a hot day. Crunchy cabbage and toasted almonds, salty-sour dressing spiked with ginger and garlic and toasted sesame oil, and green onions or chives combine to make a wonderful salad. It would work well for a picnic side dish. If you tossed some leftover roasted chicken on [...]

These homemade whole grain “handkerchief” noodles are soaked overnight for both better nutrition and better digestibility. They are then rolled thin and cut into squares in a traditional noodle shape. It should remind you a little of a handkerchief, hence it’s name. Your fresh pasta is now ready to dry or cook.
