Chicken Noodle Soup with Turkey "Sausage"

My 18 month little girl has been going through a growing spurt and has been needing to eat more food than normal. It can be a challenge to find things that she will eat that is also healthy. I created this soup with her in mind. She seemed to really enjoy it and especially liked the carrots and noodles in it. But my husband actually really liked it. Part of it’s success was due to a wonderful homemade chicken broth I made this week. I encourage you to make your own, if you can. I have found that a good tasting broth makes all the difference in a soup like this.

With a good chicken broth, this soup will be flavorful, but still mild enough for young ones (and old!) to enjoy. It’s a nice soup to have on a cold night and perfect to have when a cold hits. The turkey sausage is simple to make, but adds a nice dimension to the soup.

It’s a simple, unassuming soup that warms the body, nourishes a growing baby, a tired mom, and a husband with a cold.

Chicken Noodle soup, with Ground Turkey “Sausage”

3 carrots, peeled and sliced thinly
2 celery sticks, sliced thinly
1 onion, minced
2 tablespoons olive oil
10 cups of chicken broth
2 cups of brown rice noodles, spiral, or other favorite shape
A handful of minced parsley, minced
Salt and pepper

Turkey sausage

1/2 pound of ground turkey (I use dark ground turkey meat)
1 teaspoon of onion powder
1/2 teaspoon of garlic or one clove
1/2 teaspoon of salt
1 teaspoon of thyme or sage
freshly ground pepper

1-Heat oil in pot over medium high heat. When hot, add chopped veggies, stirring frequently. Cook until vegetables are soft

2 -Add broth and bring to a boil. Add noodles, return to a boil, lower heat and let simmer until noodles are soft (check package for time allotment).

Meanwhile prepare turkey sausage:

3-In a small saucepan over medium heat, cook the turkey with seasoning until cooked through. Season with salt and pepper, drain off any fat, and add to soup when the noodles are done.

4-Add some minced parsley and cook for a few minutes. Check the taste. If using homemade broth, salt and pepper liberally to taste.

Serve with a green salad with Everyday Dressing and Millet Biscuits and you have a complete meal!

    Hi there – I found you thru WFMW. Your blog is absolutely lovely.
    I try to fix turkey bacon and other turkey dishes as subsitutes for fattier meat as often as I can. I think I will have to try this. Thanks!
